MIXED GREENS WITH ROASTED CHERRY TOMATOES AND FRIED GOAT CHEESE CROUTONS
Steps:
- For the salad: Place the tomatoes on a baking sheet, drizzle with some olive oil and sprinkle with salt and pepper. Roast until tender and starting to brown, about 20 minutes. Let cool.
- Meanwhile, toast the pecans in a large skillet over medium heat, tossing occasionally, until fragrant, 3 to 4 minutes. Let cool, then chop.
- For the vinaigrette: Whisk together the champagne vinegar, orange juice, honey, Dijon and shallot in a medium bowl. Slowly whisk in the olive oil; season with some salt and pepper.
- For the goat cheese croutons: Heat the vegetable oil in a medium skillet over medium-high heat. Slice the goat cheese into 8 equal rounds. Add to 3 shallow dishes, the flour, egg and panko. Coat each goat cheese round with flour, then egg and then panko, shaking off excess, and fry until golden on both sides, about 1 minute per side. Transfer to a paper-towel lined rack or plate.
- To assemble the salad, toss the greens, pear, pecans and tomatoes in a large bowl. Drizzle with some vinaigrette and gently toss to fully combine. Divide the salad among 4 salad plates, top each with 2 goat cheese croutons, and serve.

This is another low fat, quick recipe. A perfect side dish or main dish. Great summer salad. If you can't find toasted sesame oil, you can substitute vegetable oil and sprinkle the salad with toasted sesame seeds.

MIXED GREENS WITH BLUE CHEESE DRESSING
I like to make this dish with whatever greens are in season. In spring, I use tender young greens from my garden, including spinach and Bibb lettuce. This salad is our favorite to serve with a baked chicken casserole. It's also perfect for potlucks-just toss the dressing with vegetables right before serving.

Tips:
- For the best flavor, use fresh, young collard greens. If you can't find collard greens, you can substitute other leafy greens, such as kale or spinach.
- Be sure to wash the collard greens thoroughly before cooking. Collard greens can be gritty, so it's important to remove any dirt or debris.
- To save time, you can use pre-cut collard greens. However, if you're using fresh collard greens, you'll need to remove the stems and chop the leaves.
- Don't overcook the collard greens. They should be tender but still slightly crunchy.
- If you don't have any sherry on hand, you can use white wine or chicken broth instead.
- Serve the collard greens with your favorite sides, such as cornbread, mashed potatoes, or roasted chicken.
Conclusion:
Sherried greens with fruit and blue cheese is a delicious and easy-to-make side dish that's perfect for any occasion. The combination of sweet, tart, and savory flavors is sure to please everyone at the table. So next time you're looking for a new way to serve collard greens, give this recipe a try.
