2 cups leftover turkey meat
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
2 bay leaves
1 teaspoon dried thyme
2 cups reduced-sodium chicken broth
1/2 cup frozen green peas
1 1/2 cups leftover mashed potatoes
Salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • In a large saucepan, combine turkey, carrots, celery, onion, bay leaves, and thyme. Pour over chicken broth and set pan over high heat. Bring to a boil. Reduce heat to medium and simmer 5 minutes, until liquid reduces slightly. Remove bay leaves. Remove from heat and stir in peas.
  • Transfer turkey mixture to a deep-dish pie plate or shallow casserole dish placed on a baking sheet. Spoon mashed potatoes over top and, using the back of a spoon, make an even layer.

2 large potatoes, peeled and cut
1/4 cup nonfat sour cream
salt and pepper
1 tablespoon olive oil
1 cup onion, chopped
2 -3 carrots, diced
2 medium celery ribs, diced
1 garlic clove, minced
1 cup leftover cooked turkey, cut into small pieces
3 tablespoons flour
1 teaspoon thyme
2 cups fat free chicken broth or 2 cups turkey broth

Steps:

  • Put potatoes in pan with water and cook until fork-tender.
  • Drain potatoes; add sour cream and 1/2 c broth.
  • Mash until smooth and set aside.
  • Meanwhile, heat oil in large skillet over med-hi heat.
  • Add onion, carrots and celery.
  • Cook until soft; about 5 minute.
  • Add garlic; cook 1 more minute.
  • Add turkey and cook till warmed through.
  • Add flour, thyme, salt and pepper; stir to coat.
  • Add remaining broth and bring to simmer;simmer until mixture thickens, about 4 minute.

2 tablespoons butter, room temperature
¼ cup warm milk
1 tablespoon olive oil
1 onion, chopped
1 pound ground turkey
1 large carrot, shredded
1 (4.5 ounce) can sliced mushrooms
1 tablespoon chopped fresh parsley
¼ teaspoon dried thyme
1 clove garlic, minced
1 teaspoon chicken bouillon powder
1 tablespoon all-purpose flour
salt to taste

Steps:

2 Tbsp butter
1/4 c all-purpose flour
2 c chicken broth or more if needed
1 Tbsp Better Than Bouillon chicken base
1/2 tsp salt
1/2 tsp pepper
3 c mashed potatoes
2 c shredded cheddar cheese
2 c chopped turkey
1 c corn or green beans

Steps:

  • 1. Put 2 Tablespoons of butter in an ovenproof skillet. Saute onions, carrots, and celery.

1 tablespoon all-purpose flour
2 teaspoons tomato paste
2 -2 1/2 cups chopped roasted turkey (white and or or dark meat) or 2 -2 1/2 cups shredded roasted turkey (white and or or dark meat)
1 1/4 cups chicken stock or 1 1/4 cups canned chicken broth
