This is a very savory and tasty soup and is best served with garlic toast.

Number Of Ingredients 19

2 cups medium seashell pasta
4 cups water
24 ounces boneless, skinless chicken meat
1 cup diced onion
¼ cup chopped celery
¼ cup minced fresh parsley
1 bay leaf
1 teaspoon salt
¼ teaspoon ground white pepper
2 potatoes, diced
4 green onions, chopped
3 cubes chicken bouillon
½ teaspoon seasoning salt
½ teaspoon poultry seasoning
4 cups milk
¼ cup margarine
¼ cup all-purpose flour
1 pinch ground nutmeg
3 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and set aside.
  • Simmer water, chicken, diced onions, celery, minced parsley, bay leaf, salt and pepper in Dutch oven until chicken is tender. Remove bay leaf; discard. Remove chicken; cool.
  • Add potatoes, green onions, bouillon cubes, seasoned salt and poultry seasoning to broth. Simmer 15 minutes. Add milk, cooked pasta, and chicken; return to simmer.
  • Melt butter or margarine over medium heat. Add flour, stirring constantly, until mixture begins to brown. Add to soup; blend well. Let soup stand 20 minutes to blend flavors. Season to taste. Garnish with nutmeg and chopped parsley.

4 medium skinless pieces of chicken, can be all white meat or mixed
2 slice carrots, thin sliced
1 c chopped onion
1/4 c chopped celery
1/4 c minced parsley
2 c each - chicken broth & water
bay leaf
1 tsp salt
1/2 tsp pepper
1/2 tsp each - season salt & poultry seasoning
2 tsp chicken flavored buillon paste or to taste
2 medium potatoes -peeled and cubed
2 c shell shaped macaroni - cooked and drained - or today i added the macaroni at the end with the chicken and it cooked just fine the last 20 minutes of simmering
4 c milk
1/4 c butter
1/4 c flour
nutmeg to taste

Steps:

  • 1. In a dutch oven, combine chicken, water, chicken stock, onion, carrots, celery, bay leaf, salt & pepper. Bring to a boil and reduce heat to low; simmer until chicken is tender.
  • 2. Remove the bay leaf. Now, remove the chicken and cool - debone and cut into small cubes, set aside. Now, add potatoes, bouillon, season salt and poultry seasoning to the broth. Simmer for another 15 minutes. Add the milk, macaroni and chicken and return to simmer.
  • 3. Melt the butter in a small saucepan over medium heat. Add the flour and continuously stir until mixture begins to brown.
  • 4. Add the butter mixture to the pot and blend well. Simmer on low heat for 20 minutes. Season to taste. Can sprinkle with nutmeg and some extra fresh parsley if desire. When reheating you may want to add a bit more milk or stock to thin it out a bit, as it thickens as it cools. Enjoy this delicious comfort soup...

2 cups shell pasta (uncooked)
2 tablespoons oil
1 cup tomato sauce (small can)
2 beef bouillon cubes
salt
pepper
onion salt
garlic salt
water
grated cheese

Steps:

  • Brown pasta in oil in large sauce pan. Add tomato sauce and fill pan 3/4 full of water. Add bouillon cubes and seasoning. When macaroni is soft, turn heat down to low and add cheese.

Great autumm recipe, served in the pumpkin shell. Perfect for Halloween or Thanksgiving or a special party. It can be prepared, to a point, one day ahead, then finished the next day. I'm guessing on the prep time, so don't scold me if its wrong. lol.

6 lbs pumpkin, perferably a sugar pumpkin
3 tablespoons unsalted butter
1 onion, sliced thin
2 carrots, grated course
2 cups chicken broth
3 cups water, plus if desired, add water for thinning soup
1 bay leaf
1/2 cup heavy cream
6 ounces kielbasa
1/3 cup fresh parsley, minced

Steps:

  • Slice off stem of pumpkin, 2-1/2 inches from the top, reserve, scrape out the seeds and membranes.
  • Brush the inside with 1-1/2 tablespoons of melted butter.
  • Top pumpkin with stem and bake in a shallow pan at 375 degree oven for 1-1/4 hours or until plup is tender. Let cool in pan.
  • In a large heavy saucepan, cook onion in butter until soft. Add carrots, broth, 3 cups water andd bay leaf and simmer until carrots are tender. Discard bay leaf.
  • Discard any liquid in the pumpkin and scoup out pulp leaving 1/4 inch thick shell.
  • In a blender, puree pulp with carrot mixture in batches.
  • Transfer the puree to a kettle and stir in cream and salt and pepper to taste.
  • (You can prepare, to this point, 1 day ahead if desired, and chill in a baking dish.).
  • Slice part of the sausage into 8 thin rounds. then slice the rest, quartered lengthwise and then sliced thin. In a heavy skillet, cook the sausage over moderate heat, stirring until light brown and drain on paper towel.
  • Reserve the 8 sausage rounds, stir the other sausage pieces into the soup and stir soup over moderate heat, (thin with water if needed), until hot.
  • Heat the shell, if needed, in 375 degree oven until warm and ladle soup into shell.
  • Garnish with parsley and sausage rounds.
  • Serve with breadsticks, or your favorite crusty bread.
