1 medium yellow onion, diced

3 c chopped fresh broccoli (frozen can be used too)
4 Tbsp butter
1/2 c diced onions
1/4 c flour
1 clove minced garlic
3 c water
2 Tbsp chicken bouillon
2 c half & half
3 c grated cheddar cheese
salt and pepper to taste

  • 1. Chop broccoli into bite size pieces. Boil broccoli until tender, drain, save the broccoli water, add the bullion set aside.

6 1/2 cups chicken stock or canned low-salt chicken broth
1 cup whipping cream
3 tablespoons all purpose flour
2 cups (packed) grated extra-sharp cheddar cheese (about 8 ounces)

  • Melt 3 tablespoons butter in heavy medium pot over medium-high heat. Add broccoli stems and onion; sauté until onion is translucent, about 6 minutes. Add garlic and tarragon; sauté 1 minute. Add stock; bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes. Stir in cream.
