SHEET-PAN BAKED FETA WITH BROCCOLINI, TOMATOES AND LEMON

Sheet-Pan Baked Feta With Broccolini, Tomatoes and Lemon image

When baked, feta gains an almost creamy texture, similar to goat cheese but with feta's characteristic tang. In this easy vegetarian sheet-pan dinner, broccolini (or broccoli), grape tomatoes and lemon slices roast alongside the feta until the broccolini crisp, the tomatoes burst and the lemon rinds soften. (Remember, broccolini has a tender, delicious stalk so only the bottom 1/2-inch needs to be trimmed.) Serve this dish over a pile of orzo for a complete meal. If you like, cut the broccolini, feta and lemon into bite-size pieces and toss with the orzo.

Time 25m

Yield 4 servings

Number Of Ingredients 11

1 bunch broccolini, ends trimmed, thick stalks split lengthwise, or broccoli, stalks trimmed and cut into bite-size pieces
1 pint grape tomatoes, halved (about 2 cups)
1 small red onion, peeled, quartered and cut into 2-inch wedges
1 lemon, 1/2 cut into thin rounds and the remaining 1/2 left intact, for serving
3 tablespoons olive oil, plus more for serving
1 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
2 (6- to 8-ounce) blocks feta, cut into 1-inch slices
Cooked orzo or farro, for serving
1/2 cup fresh basil or cilantro leaves and fine stems, roughly chopped (optional)

Steps:

  • Heat the oven to 400 degrees with a rack set in the lower third. On a sheet pan, combine the broccolini, tomatoes, onion and lemon slices with the olive oil and toss. Add cumin and red-pepper flakes, season with salt and pepper, and toss again until evenly coated. Nestle the feta slices into the vegetables. (It's OK if they break apart a little.)
  • Roast 15 to 20 minutes, stirring halfway through but leaving the feta in place, until the broccolini is charred at the tips, the stems are easily pierced with a fork and the tomato skins start to blister and break down.
  • Serve over orzo or farro. Drizzle with olive oil and serve with the remaining lemon half for squeezing. Top with fresh herbs, if using.

ITALIAN ROASTED VEGETABLES

Italian Roasted Vegetables image

I love the taste of roasted vegetables. This recipe uses a bunch of different ones, and can easily be changed to add or subtract ones as you wish.

Provided by lazyme

Categories     Potato

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 13

2 yellow bell peppers, cut into chunks
2 red bell peppers, cut into chunks
2 green bell peppers, cut into chunks
3 zucchini, sliced lengthwise
2 bunches green onions, trimmed
2 Japanese eggplants, sliced
24 asparagus spears, trimmed
1 lb new potato, thinly sliced
8 ounces mushrooms, halved
1 bunch fresh rosemary, chopped
12 garlic cloves, chopped
1/4 cup extra virgin olive oil
salt and pepper, to taste

Steps:

  • Preheat oven to 500ºF.
  • Put veggies into open roasting pan. Toss with rosemary, chopped garlic, salt and fresh ground black pepper and just enough olive oil to coat.
  • Roast for about 45 minutes, or until crisp tende.

Tips:

  • Choose firm vegetables: Vegetables like broccoli, carrots, and potatoes hold their shape well when roasted. Avoid vegetables that are too soft, such as tomatoes or zucchini, as they may become mushy.
  • Cut vegetables into uniform pieces: This will help them cook evenly. For vegetables like broccoli and cauliflower, cut them into florets. For vegetables like carrots and potatoes, cut them into 1-inch pieces.
  • Use a variety of vegetables: This will add flavor and color to your dish. Some good choices include broccoli, carrots, potatoes, zucchini, bell peppers, and onions.
  • Season vegetables well: Use a combination of olive oil, salt, pepper, and herbs. You can also add a squeeze of lemon juice or a drizzle of balsamic vinegar.
  • Roast vegetables at a high temperature: This will help them caramelize and brown. Aim for a temperature of 425 degrees Fahrenheit or higher.
  • Don't overcrowd the pan: Make sure there is enough space between the vegetables so that they can roast evenly. If the pan is too crowded, the vegetables will steam instead of roast.
  • Roast vegetables until tender: The cooking time will vary depending on the type of vegetable. Check the vegetables frequently and remove them from the oven when they are tender-crisp.

Conclusion:

Sheet tray Italian roasted vegetables are a delicious and easy side dish that can be enjoyed with a variety of meals. They are also a great way to get your daily dose of fruits and vegetables. With a little planning and preparation, you can have a delicious and healthy meal on the table in no time.
