1 large shallot , or 2 medium shallots
3 tablespoons lemon juice (about one lemon's worth)

Steps:

  • Gather the ingredients.
  • Peel and finely chop the shallot. You should end up with about 3 tablespoons in total.
  • In the bowl of a stand mixer fitted with the paddle attachment, soften up the butter for a couple of minutes on low speed.

Kosher salt and freshly ground pepper
1 large shallot, minced
3/4 cup boxed red wine
2 to 3 tablespoons cold unsalted butter, cubed

  • Remove the steak from the refrigerator 30 minutes before cooking. Heat a large heavy-bottomed skillet over medium-high heat.
