I was making taco's with my son and this is what happened. lol We got some of the recipe from a taco seasoning packet and the rest we put together.

1 can(s) refried beans (16 oz)
1 pt sour cream
1 pkg taco seasoning mix, brand up to you
2 c mexican blend shredded cheese
1 c guacamole
1 c chopped tomato
1/2 c sliced green onion
1/2 c black olives, sliced, optional
1 medium avocado, diced and tossed in lime juice

Steps:

  • 1. Put refried beans in a shallow serving dish. Mix the sour cream and taco seasoning mix together till well blended. Spread over refied beans.
  • 2. Top with 2 cups of shredded cheese, the guacamole, tomatoes, green onions, black olives and diced avocados. It will be all in layers. Tossing the avocado in lime or lemon juice helps to keep from browning to fast.
  • 3. Serve with your favorite chips or put it on a soft taco shell and roll it up.

16 oz. sour cream
1/4 cup taco seasoning mix, from mccormick
2 cups shredded cheddar cheese
1 cup prepared guacamole
1 cup chopped tomato
1/2 cup sliced green onions
1/2 cup sliced black olives
tortilla chips

Steps:

  • 1. Spread refried beans in shallow serving dish. Mix sour cream and taco seasoning until well blended. Spread over refried beans. Top with cheese, dollops of guacamole, tomato onions, and olives. Serve with tortilla chips. Makes 8 to 10 servings.

I found this recipe in the Chicago Tribune paper. I made it saturday night when my daughter dropped off her 6 kids so she could go to work. It was really good, my grandkids devoured this and begged me to make more. Unfortunately that would have included going to the store in the rain. "I don't think so". The only thing I left out was the olives, none of the kids liked the olives. Although they make for some funny times with the youngest putting them on her fingers. Hope you enjoy this.
