Steps:
- Wrap a slice of pancetta tightly around each asparagus spear. Cover and refrigerate until ready to cook.
- Heat a large sauté pan over medium heat and coat lightly with vegetable oil (the more oil you use, the crispier the pancetta will be -- just be careful not to use too much or it will splatter). Cook the asparagus, turning as each side browns, until they are just tender and the pancetta is crisp, about 5 minutes. Transfer the asparagus to a plate lined with paper towels to soak up any excess grease, then transfer to a serving platter and serve immediately.

Steps:
- Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
- Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
- Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
- Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.

PANCETTA- AND SESAME-COATED TURNIPS
Crunchy, salty, and fried. Who knew turnips could taste this good? These can be fun appetizers or the perfect side for sesame-oil-seared black cod with a rice-vinegar soy glaze.
Provided by Dan Barber
Yield Makes 4 servings
Number Of Ingredients 5
Steps:
- Wrap 1 pancetta slice around 1 turnip wedge, covering most of turnip. Repeat with remaining pancetta slices and turnip wedges.
- Line rimmed baking sheet with waxed paper. Whisk egg in medium bowl to blend and place sesame seeds in another medium bowl. Dip each pancetta-wrapped turnip wedge into beaten egg to coat, then dip into sesame seeds, turning to coat generously on all sides. Place on prepared baking sheet. DO AHEAD: Turnips can be prepared 2 hours ahead. Cover and keep chilled.
- Preheat oven to 350°F. Pour enough vegetable oil into heavy medium saucepan to reach depth of 2 inches. Attach deep-fry thermometer to side of pan and heat oil to 350°F. Working in batches, add sesame-coated turnip wedges to oil, and deep-fry until sesame seeds are golden, about 1 minute (turnips will be very crunchy). Transfer turnips to paper towels to drain. Arrange turnips on rimmed baking sheet and bake just until turnips are beginning to soften, about 7 minutes. Sprinkle generously with salt and pepper.
Tips:
- Choose thick asparagus spears: Thicker asparagus spears will hold up better to wrapping and grilling.
- Trim the asparagus spears: Cut off the woody ends of the asparagus spears to make them easier to eat.
- Blanch the asparagus spears: Blanching the asparagus spears will help them cook evenly and prevent them from becoming tough.
- Season the asparagus spears: Sprinkle the asparagus spears with salt and pepper before wrapping them in pancetta.
- Wrap the asparagus spears tightly: Wrap the asparagus spears tightly in pancetta so that the pancetta does not fall off during grilling.
- Grill the asparagus spears: Grill the asparagus spears over medium heat until the pancetta is crispy and the asparagus is tender.
- Serve the asparagus spears: Serve the asparagus spears immediately with your favorite dipping sauce.
Conclusion:
Sesame-Coated Pancetta-Wrapped Asparagus is a delicious and easy-to-make appetizer or side dish. The asparagus is tender and flavorful, the pancetta is crispy and smoky, and the sesame seeds add a nice nutty crunch. This dish is sure to be a hit at your next party or potluck.
