SESAME TOASTS

Sesame Toasts image

Provided by Food Network Kitchen

Categories     appetizer

Time 40m

Yield 6 servings

Number Of Ingredients 11

12 1/2-inch-thick slices baguette
1 clove garlic
3 tablespoons chopped peeled ginger
1/2 pound skinless, boneless chicken breasts, cut into pieces
1 large egg white
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon cornstarch
Kosher salt
2 scallions, white and light-green parts only, thinly sliced
1/4 cup sesame seeds
Peanut oil, for frying

Steps:

  • Preheat the oven to 200 degrees F. Arrange the bread on a baking sheet and toast in the oven until slightly dry, about 10 minutes; let cool.
  • Meanwhile, drop the garlic into a food processor through the feed tube with the motor running. Add the ginger, 1 tablespoon at a time, until minced. Scrape down the food processor, then add the chicken, egg white, rice wine, cornstarch and 1 teaspoon salt; pulse into a smooth paste.
  • Spread 1 tablespoon of the chicken mixture on each piece of toast and sprinkle with the scallions. Put the sesame seeds in a shallow bowl and dip the chicken-covered side of the toasts in the seeds. (The toasts can be covered and refrigerated at this point for up to 3 hours.)
  • Heat about 1/2 inch of peanut oil in a deep skillet over medium-high heat until a deep-fry thermometer registers 325 degrees F. Working in batches, fry the toasts, chicken-side down, until golden brown and cooked through, about 4 minutes. Flip the toasts and cook 1 more minute. Drain on a paper-towel-lined plate. Season with salt and serve warm.

SESAME CHICKEN

Sesame Chicken image

This recipe really satisfies my craving for Chinese food. I serve it over rice with a side of steamed vegetables. The sauce makes just enough to glaze the chicken. I usually double or even triple the sauce recipe to have enough to pour over our rice and veggies. It is a nice low-fat alternative to the restaurant-style Sesame Chicken.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 8

6 boneless skinless chicken breast halves, pat dry with paper towels
1/2 cup honey
1/2 cup low sodium soy sauce
1 cup water
2 tablespoons cornstarch
1/2-1 teaspoon ground ginger (fresh is better)
1/2-1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds

Steps:

  • Cut chicken breast into 1 inch strips or bite size pieces.
  • Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
  • Cook chicken for about 6 minutes or until no longer pink.
  • Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
  • Whisk until no corn starch lumps appear.
  • Pour sauce mixture into skillet with chicken.
  • Cook until sauce thickens slightly.
  • You can add more water if sauce is too thick.
  • Sprinkle with sesame seeds.
  • Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.
  • Note: Since originally posting this recipe, I have tried some of the suggestions others have made. I do like it with a bit of sesame oil (be careful not to get too much, just a few drops at the end of cooking is good enough for me, but you might like more), fresh ginger is also good if you have it on hand. I have tried it with garlic and it is good that way also. I have also found that it is good with shrimp and pork. Basically what I am trying to say is, the original recipe is just a simple, quick and healthy meal I came up with when I was craving Chinese food. I thought it turned out really great and wanted to share it. I'm happy that so many of you have enjoyed it. For those of you that didn't care for it, I hope you can find one that suits your fancy some where else.

Tips:

  • To make the sesame chicken toast more flavorful, use a flavorful soy sauce, such as a low-sodium soy sauce or a tamari soy sauce.
  • If you don't have sesame oil, you can substitute vegetable oil. However, sesame oil will give the chicken toast a more authentic flavor.
  • Use fresh ginger and garlic for the best flavor. If you don't have fresh ginger or garlic, you can use ground ginger or garlic powder, but the flavor will not be as good.
  • If you don't have a food processor, you can chop the chicken and vegetables by hand. However, a food processor will make the job much easier.
  • If you don't have a bamboo steamer, you can steam the chicken toast in a colander placed over a pot of boiling water.
  • Serve the sesame chicken toast with your favorite dipping sauce, such as a sweet and sour sauce, a plum sauce, or a soy sauce.

Conclusion:

Sesame chicken toast is a delicious and easy-to-make appetizer or snack. It is perfect for parties or potlucks. The chicken is tender and flavorful, and the sesame seeds add a nice crunch. The toast is also a great way to use up leftover chicken. If you are looking for a new and exciting appetizer, give sesame chicken toast a try!
