SEACOAST SALAD (TUNA MACARONI)
This is a very old recipe that I originally got off of the side of a box of Kraft Macaroni and Cheese more than 25 years ago. I make this when I tire of plain tuna macaroni and want all the "junk" back in it! LOL! When you get bored, too, this is a nice change of pace! Very easy to make. (*Since Kraft has changed their formula so much over the years, I now use Velveeta Shells and Cheese, or make homemade macaroni and cheese using the velveeta recipe.) So whatever you prefer is what you should use. HTH! :)

TUNA-MACARONI SALAD
You pretty much already have everything you need to make this side dish, a great accompaniment to fried or grilled proteins. Some people love raw onion and celery, but you can leave them out or keep them in as you like. Make sure you use tuna packed in water. (Tuna in olive oil will make the salad too oily.) It's best chilled - don't serve it at room temperature - its creamy unctuousness balances out the heat (from spice or from cooking) of whatever it's paired with.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your salad. Look for ripe tomatoes, crisp celery, and tender tuna.
- Don't overcook the tuna: Tuna is a delicate fish that can easily become dry and tough. Cook it just until it is opaque throughout, about 3-4 minutes per side.
- Use a light hand with the mayonnaise: Mayonnaise can easily overpower the other flavors in the salad. Use just enough to bind the ingredients together.
- Add some crunch: Celery and chopped nuts add a nice crunch to the salad. You can also add other crunchy vegetables, such as carrots or bell peppers.
- Chill the salad before serving: This will help the flavors to meld and the salad will be more refreshing.
Conclusion:
Seacoast salad is a classic summer dish that is easy to make and always a crowd-pleaser. With its combination of fresh vegetables, tender tuna, and creamy mayonnaise, this salad is sure to be a hit at your next potluck or picnic.
