SALMON SCRAMBLE

Salmon Scramble image

One morning, years ago, my husband, Todd, and I whipped up this dish as a way to use leftover smoked salmon...it caught on! Now we always make extra portions of this tasty fish at dinner so we can have our family favorite in the morning.

Provided by Taste of Home

Categories     Breakfast     Brunch

Time 15m

Yield 4-6 servings.

Number Of Ingredients 7

8 eggs
3/4 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (7-1/2 ounces) pink salmon, drained or 1 cup smoked salmon, flaked and cartilage removed
1/2 cup shredded Monterey Jack cheese
1/4 cup minced fresh parsley

Steps:

  • In a bowl, beat eggs, milk salt and pepper. Stir in salmon, cheese and parsley. In a greased skillet, cook and stir gently over medium heat until eggs are set, about 3-5 minutes.

Nutrition Facts : Calories 191 calories, Fat 12g fat (5g saturated fat), Cholesterol 308mg cholesterol, Sodium 522mg sodium, Carbohydrate 2g carbohydrate (2g sugars, Fiber 0 fiber), Protein 18g protein.

Tips:

  • Utilize superior quality elements. Search for farm-clean eggs that feature a lively orange yolk, and select the freshest smoked salmon this is at hand. Employing notable materials will amplify the entire flavor profile of your dish.
  • Use precise seasoning. Smoked salmon usually imparts a substantial savory taste, thus it's important to use salt sparingly. Freshly ground black pepper will offer a nice touch of spiciness, while chopped chives will add an herbaceous note.
  • Eggs should be cooked gently. Eggs are susceptible to overcooking, leading to a rubbery texture. Cook them over low temperature and stir constantly to ensure even cooking. Remove them from heat immediately when they reach your desired doneness.
  • Ensure optimal doneness. For a creamy texture, remove eggs from heat while they're still slightly runny. This residual heat will carry on cooking the eggs for a few extra seconds, giving you perfectly cooked, tender scrambled eggs.
  • Add-ins are optional. While smoked salmon is the star of this recipe, feel free to play around with other complementing ingredients. Consider adding chopped bell peppers, mushrooms, tomatoes, or even a touch of cream for extra richness.

Conclusion:

Scrambled eggs with smoked salmon make a quick, delicious, and nutritious breakfast or brunch option. The creamy texture of the eggs pairs wonderfully with the smoky, salty flavor of the salmon. This dish is also highly adaptable, as you can easily adjust the seasonings and add-ins to match your preferences. Give it a try and discover a new favorite way to start your day.
