- To prepare salsa: pour tomatoes into a sieve and set in sink, press on the tomatoes to drain off extra liquid. Spoon tomatoes in a bowl and stir in rest of the salsa ingredients (chili powder - pepper). Set aside.
- To make the eggs in a medium bowl combine next 6 ingredients (eggs - pepper). Set aside.
- In a skillet spray with Pam over medium heat.
- Add shallots and peppers and cook stirring for 3-5 minutes or until shallots are tender.
- Pour egg mixture into skillet and scramble eggs cooking until done (5 minutes).
- Serve eggs topped with salsa.

- Preheat oven to 400 degrees F.
- In a skillet over medium heat, heat the oil and then add scallions, green pepper, tomato and garlic and saute for 5 minutes.
- Add egg whites and whole eggs, cooking until eggs are scrambled (3-5 minutes). Remove from heat and stir in cheese, cilantro, salt and pepper.
- Place tortilla on plate and spoon in 1/4 of mixture, roll up and place seam down in baking dish which was sprayed with Pam. Repeat with remaining tortillas.

This is my breakfast every morning at work. High in protein, low in fat and calories, high in taste. This is a FANTASTIC and FILLING breakfast for those on the go. I use crumbled goat cheese, but feta or even shredded cheddar or whatever type you like will work great. You will need a microwave. You can also substitute the egg whites (in a carton) as well). As for the hamsteaks - I use the farmland hamsteaks - thicker than regular ham lunch meat and only 70 cals per slice! (I find these at wally world in the middle of the grocery section where the full hams are located). As far as storage to work - I just use the small ziplock containers in my lunch bag!
