A Bobby Flay recipe on the Food Network website. I make this regularly, and my family (and I) absolutely flip over it! It's our favorite pasta and seafood recipe, hands down. I make this on the outdoor grill, but in colder months I make it on the stovetop grill or even in a fry pan.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your scampi sauce. Look for shrimp that are firm and have a translucent appearance. Avoid shrimp that are brown or have black spots.
  • Cook the shrimp properly: Shrimp should be cooked quickly over high heat to prevent them from becoming tough. Cook them for just a few minutes per side, or until they are pink and opaque.
  • Make sure the sauce is thick and creamy: The sauce should be thick enough to coat the shrimp and pasta, but not so thick that it's heavy or gloopy. If the sauce is too thin, add a little bit of cornstarch or flour to thicken it. If the sauce is too thick, add a little bit of milk or cream to thin it out.
  • Season the sauce to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a pinch of red pepper flakes for a little extra flavor.
  • Serve the scampi sauce over pasta, rice, or vegetables: Scampi sauce is a versatile dish that can be served over a variety of different foods. Choose your favorite sides and enjoy!
