Time 30m

Yield 4 servings

Number Of Ingredients 10

Kosher salt
12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

CLASSIC SHRIMP SCAMPI

Classic Shrimp Scampi image

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

Tips:

  • Prep your ingredients: Before you start cooking, make sure all of your ingredients are prepped and measured so that you can easily follow the recipe.
  • Use fresh seafood: For the best flavor, use fresh shrimp or scallops. If you can't find fresh seafood, frozen seafood will also work.
  • Cook the seafood properly: Don't overcook the seafood, or it will become tough and rubbery. Cook the shrimp or scallops just until they are opaque and cooked through.
  • Use a flavorful sauce: The sauce is what makes this dish so delicious, so make sure it's packed with flavor. Use a combination of butter, garlic, herbs, and spices to create a sauce that will complement the seafood.
  • Serve immediately: This dish is best served immediately after it is cooked. The sauce will thicken as it cools, so don't let it sit for too long before serving.

Conclusion:

Scampi Rockefeller is a classic seafood dish that is perfect for a special occasion. It's easy to make and always a crowd-pleaser. Whether you're making it for a romantic dinner or a casual get-together, Scampi Rockefeller is sure to impress.
