Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your dish. Look for scallops that are plump and have a slightly briny smell. The rice noodles should be thin and translucent.
  • Be careful not to overcook the scallops. They should be cooked just until they are opaque in the center. Overcooked scallops will be tough and chewy.
  • Use a light touch when stir-frying. Don't overcrowd the pan, and don't stir too vigorously. This will help to prevent the scallops and vegetables from becoming mushy.
  • Add the rice noodles at the end of the cooking process. This will help to prevent them from becoming overcooked.
  • Season the dish to taste. Use soy sauce, fish sauce, and Sriracha to taste. You can also add a squeeze of lime juice or a sprinkle of chopped cilantro.

Conclusion:

Scallops and rice noodles is a quick and easy dish that is perfect for a weeknight meal. It is also a great way to use up any leftover scallops. The combination of tender scallops, chewy rice noodles, and flavorful vegetables makes this dish a winner. Try it tonight!
