2 tablespoons (1/4 stick) butter
3 cups thinly sliced onions (about 2)
1 pound mushrooms, sliced
1 teaspoon fennel seeds, chopped
1 tablespoon minced garlic
2 tablespoons all purpose flour
3 cups whole milk
1 cup whipping cream
10 ounces soft fresh goat cheese (such as Montrachet), crumbled
1/3 cup plus 2 tablespoons freshly grated Parmesan cheese
1 3/4 teaspoons salt
1/2 teaspoon ground black pepper
2 pounds Yukon Gold potatoes, unpeeled, very thinly sliced
4 cups very thinly sliced cored fennel bulbs (about 2 pounds), fronds chopped and reserved
Paprika

Steps:

  • Preheat oven to 375°F. Lightly oil 13 x 9 x 2-inch glass baking dish. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add onions and sauté until golden, about 15 minutes. Add mushrooms and fennel seeds and sauté until mushrooms are brown, about 10 minutes. Stir in garlic, then flour.
  • Gradually stir milk and cream into mushroom mixture. Simmer over medium heat until sauce thickens slightly, stirring often, about 5 minutes. Add half of goat cheese, 1/3 cup Parmesan, salt and pepper. Stir until goat cheese melts, about 1 minute. Remove from heat.
  • Mix potatoes, sliced fennel and mushroom mixture in large bowl. Transfer to prepared baking dish. Cover dish with foil. Bake until potatoes are almost tender, about 1 hour. Sprinkle with remaining goat cheese and 2 tablespoons Parmesan, then paprika. Bake uncovered until vegetables are very tender, about 30 minutes longer. Remove from oven; let stand 15 minutes. Provided by Nita Clapper

Categories     Vegetables

Number Of Ingredients 10

1/2 lb potatoes, sliced into 1/8 inch
2 tsp vegetable oil
1 lb mushrooms, sliced
1 Tbsp flour
1/4 tsp salt
1/4 tsp pepper
1/2 c parmesan cheese, grated
3 Tbsp butter
3/4 c milk, low-fat
1 Tbsp fresh parsley, minced

Steps:

  • 1. Heat oven to 400 degrees.
  • 2. In 2-quart saucepan over medium heat cook potatoes, covered, in 2 inches boiling water until almost tender, 6 to 8 minutes; drain.
  • 3. In large nonstick skillet over medium heat, heat oil.
  • 4. Add mushrooms; saute over high heat until tender and liquid has evaporated; set aside.
  • 5. In small bowl combine flour, salt and pepper.
  • 6. Coat shallow 1 1/2-quart baking dish with vegetable cooking spray and cover bottom with a layer of potatoes; sprinkle with a little of the flour mixture.
  • 7. Add a layer of mushrooms.
  • 8. Sprinkle with some of the cheese; dot with butter.
  • 9. Repeat layers until all ingredients are used, ending with butter; pour milk over.
  • 10. Bake 30 minutes until potatoes are tender and top is browned.
  • 11. Sprinkle with parsley.

Tips:

  • Choose the best potatoes: Yukon Gold or Russet potatoes are the ideal choices for scalloped potatoes, as they hold their shape well and cook evenly.
  • Slice the potatoes thinly: This will help them cook more quickly and evenly. Aim for slices that are about 1/8-inch thick.
  • Use fresh mushrooms: Fresh mushrooms will give your dish the best flavor and texture. If you can't find fresh mushrooms, you can use dried mushrooms, but be sure to soak them in hot water for 20 minutes before using.
  • Don't overcook the potatoes: The potatoes should be tender but still slightly firm when you insert a fork into them. Overcooked potatoes will become mushy and lose their flavor.
  • Use a good quality cheese: The cheese is one of the main ingredients in scalloped potatoes, so it's important to use a good quality cheese that melts well. Gruyère, Parmesan, and cheddar are all excellent choices.
  • Season your dish well: Be sure to season your scalloped potatoes with salt, pepper, and garlic powder. You can also add other herbs and spices, such as thyme, rosemary, or onion powder, to taste.

Conclusion:

Scalloped potatoes and mushrooms is a classic comfort food dish that is perfect for any occasion. It's easy to make, and it's always a hit with family and friends. With its creamy, cheesy sauce and tender potatoes and mushrooms, this dish is sure to please everyone at the table.
