Steps:
- Begin by chopping the red pepper finely and leaving to drain on kitchen paper
- Next, finely dice salad onion
- Mix mayonnaise with paprika and dijon mustard
- Grate the cheddar cheese and Red Leicester cheese finely, then toss together in a bowl - use your hands, it's easy this way
- Add in the pepper & onion and mix again with your hands
- Finally, stir in the mayonnaise using a metal spoon
- Cover and chill until ready to use
- Cut the crusts from the bread
- Cut one of the slices of bread in half - we will only cut 1 sandwich from this slice
- Lay 5 of the full-sized slices out, along with one of the smaller pieces of bread
- Stir the filling briefly and spoon a generous amount onto each slice of laid out bread, spreading it out using a blunt knife
- Top each slice with another piece of bread of equal size
- Cut into slices - my bread allowed 3 sandwiches to be cut from each large piece of bread and just one from the smaller sandwich. In total, you should cut 16 small sandwiches
- Cover until ready to serve and consume as soon as possible (within the hour to avoid the bread drying out)

- Cheesy apple slaw Mix their favourite grated hard cheese with grated apple, chopped spring onions, a squeeze of lemon and a little mayonnaise. Delicious with wholemeal bread or rolls.
- Salmon smash Mash up a drained and boned can of red salmon with a little tomato ketchup. Spread onto wholemeal or granary bread and sprinkle with lots of mustard and cress.
- Tandoori chicken wraps Roll chapattis or flour tortillas around a filling of ready-cooked tandoori chicken pieces, shredded lettuce and chopped tomato. Serve with dollops of bought chunky cucumber raita.
- Scout's MCC Try Marmite, grated cheddar and sliced cucumber in a crusty baguette or ciabatta roll - they'll either love it or hate it!
- Cream cheese & roasted red pepper bagels Fill onion or regulars bagels with soft cheese and roasted peppers from a jar.
- Creamy smoked mackerel Skin and flake smoked mackerel fillets,then mix with a little mayonnaise and Greek yogurt. Spread onto thick wholemeal bread and top with crisp lettuce leaves.

Steps:
- Cut the end off the loaf and remove as much of the center so that you can fit in the steak and the mushrooms. Save the crumb, in case.
- Season the steak with your favourite spices - I like mine spicy - but don't use salt (it'll draw all the liquid out of the steak).
- Sear the steak on a hot pan, leave the meat rare, otherwise you end up with a shoe sole. After you take it out of the pan, season with salt quite liberally.
- Fry the mushrooms in the same pan so that it'll soak up the juices.
- Stuff the loaf with the steak and the mushrooms, steak in the middle and mushrooms on the sides, if there's empty space left soak the left out crumbs briefly in the juices on the pan and stuff them in too.
- Replace the removed crust end of the loaf.
- Wrap the whole thing in a double sheet of foil paper and secure with string. Then secure again with parchment paper (or film) and more string. Place under a weighted board for 6 hours.
- When eating this sandwich just cut off a slice as required.
