BEST TURKEY MEATLOAF

Best Turkey Meatloaf image

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

Time 1h15m

Yield 8

Number Of Ingredients 11

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced
¼ teaspoon ground black pepper
½ cup ketchup
¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

SAVORY & SPICY TURKEY MEATLOAF

Savory & Spicy Turkey Meatloaf image

I found this recipe on the back of some generic-brand bread crumbs a long time ago, and with some generous tweaking (including replacing the breadcrumbs with healthier oatmeal) it has become my favorite meatloaf recipe. I've made this with ground beef and ground chicken, so you don't have to use ground turkey if you'd prefer not to. As you can tell from the ingredients, this is going to be spicy, so be warned!

Provided by Ina Garten

Categories     main-dish

Time 2h10m

Yield 8 to 10 servings

Number Of Ingredients 12

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

SAVORY SPICY MEATLOAF AND SAUCE

Savory Spicy Meatloaf and Sauce image

I modified this recipe from my mom's original. This recipe uses steak sauces, so it's more flavorful than regular versions, I think. And the sauce uses the same ingredients as the meatloaf recipe, so you just need to get everything out once! Feel free to adjust the spices to your tastes, and the measurements are what I guesstimate them to be. I just eyeball it, and you can too. I'd say this yields about 5-6 slices, or 2-3 servings for 2 people. This is the first recipe I've posted, so sorry if it's a little disorganized. Enjoy!

Tips:

  • Choose the right turkey: Ground turkey breast is a lean option, but it can be dry. To add moisture and flavor, use a combination of ground turkey breast and thigh meat.
  • Don't overmix the meatloaf: Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
  • Use a variety of spices and herbs: This will give the meatloaf a complex flavor. Some good options include chili powder, cumin, oregano, and garlic powder.
  • Add some moisture: This can be done with eggs, milk, or broth. You can also add vegetables, such as onions, celery, or carrots.
  • Cook the meatloaf at a low temperature: This will help to prevent it from drying out. The ideal internal temperature for meatloaf is 165 degrees Fahrenheit.
  • Let the meatloaf rest before slicing: This will help to keep the juices in the meatloaf.

Conclusion:

Savory and spicy turkey meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover turkey. With its combination of ground turkey, spices, and vegetables, this meatloaf is sure to be a hit with your family and friends.
