8 ounces penne pasta
2 tablespoons olive oil
3 garlic cloves, minced
1 lb sweet ground sausage (i use jimmy dean's maple)
1 lb spinach
1 cup crushed tomatoes
1/2 cup chicken broth
1/2 cup dry white wine
3/4 cup sun-dried tomato packed in oil
1 tablespoon fresh basil or 1 teaspoon dried basil
2 teaspoons Tabasco sauce
salt and pepper
parmesan cheese, on top

Steps:

  • Cook pasta according to directions on box.
  • Cook oil and garlic until browned. Add sausage, brown, push to side of pan. Add spinach, cook until wilted. Add remaining ingredients and saute (about 15 minutes).
  • Serve topped w/ parmesan cheese.

1 can (15 ounces) tomato sauce
1 jar (7 ounces) roasted sweet red peppers, drained
1 medium onion, cut into wedges
1 tablespoon olive oil
2 garlic cloves, peeled
2 teaspoons balsamic vinegar
1 teaspoon sugar
1 teaspoon Italian seasoning
1/2 teaspoon ground coriander
1/2 teaspoon fennel seed
1/4 teaspoon garlic salt
1 pound bulk Italian sausage
1/3 cup shredded Parmesan cheese
1/4 cup minced fresh basil

Steps:

  • Cook pasta according to package directions. Meanwhile, place the tomato sauce, red peppers, onion, oil, garlic, vinegar, sugar, Italian seasoning, coriander, fennel seed and garlic salt in a food processor; cover and process until blended. 1 can(s) (15 oz.) tomato sauce
