We're cooking up Salisbury Steak with Onions and Gravy. 1 pound of Ground Round Beef
1/2 teaspoon of Black Pepper
1 teaspoon of Salt
1/2 teaspoon of Garlic Powder
1 teaspoon of Worcestershire Sauce
1 whole Egg
1/4 cup of dry Bread Crumbs
2 Tablespoons of Butter
1 large Onion, sliced
2 Tablespoons of Flour
2 cups of Water
2 teaspoons of Beef Bouillon Granules

Steps:

  • In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
  • Shape into 4 equal sized patties.
  • Heat a skillet over medium heat for about a minute, and then add Butter.
  • Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
  • Add the sliced Onion into the skillet, right on top of the browned bits.
  • Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
  • Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
  • Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
  • Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
  • Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.

1 ½ pounds ground beef
½ cup dry bread crumbs
1 egg
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon all-purpose flour
¼ cup ketchup
¼ cup water
1 tablespoon Worcestershire sauce
½ teaspoon mustard powder

Steps:

  • In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
  • In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
  • In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.

1 1/2 pounds lean ground beef
1/2 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
1 cube beef bouillon, crumbled (or powdered beef base)
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 whole onion, halved and thinly sliced (or diced if you prefer)
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
1 teaspoon seasoning sauce, such as Kitchen Bouquet, optional
4 dashes Worcestershire
1 teaspoon cornstarch, optional
Salt and pepper

Steps:

  • For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
  • Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
  • For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
  • Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

I have consolidated all of my favorite Salisbury Steak recipes into one! I love my hubby's caramelized onions, so these are the added supreme treat at the serving of these gems.

FOR BEEF PATTIES
2 lb beef, ground
4 Tbsp dry onion soup mix (i use my own verion of this, also on jap)
1/4 c worcestershire sauce
2 eggs
1 c bread crumbs
2 Tbsp parsley flakes
2 garlic cloves, minced (i use my zester to make it very small)
1 tsp black pepper
1/2 tsp crushed red pepper
FOR CARAMELIZED ONIONS
1-2 onions, sliced
1/4 - 1/2 c olive oil (enough to keep onions moist during sauteing)
1/2 c broth, veggie or chicken (to deglaze the pan as you saute the onions)
FOR WONDRA GRAVY
6-8 c beef broth
12- 16 Tbsp wondra
1 1/2 - 2 c water

Steps:

  • 1. Read through all of the instructions prior to starting. Prepare the meat mixture. Beef, soup mix, Worcestershire, eggs, bread crumbs, parsley, yeast, garlic, black and red pepper. Mix thoroughly and cover with plastic wrap. Set aside in fridge until ready to make dinner.
  • 2. Heat olive oil in a skillet and add sliced onions over medium to medium/low heat. You can start this step prior to forming the meat patties, this will take some time to completely sweat the onions and turn them into a lovely caramel color. When onions begin to dry out, add some broth to the pan to bring moisture back into it and keep the onions from sticking/or burning. Serve onions on the top of the steaks and gravy. Also you can make extra to be served as an additional side.
  • 3. At dinner time, prepare patties in whatever size you prefer. {We generally use a scale to weigh all of the ingredients, then divide them by however many patties you want to serve.}
  • 4. Heat up a large skillet and brown the patties on each side, 4 - 5 minutes per side.
  • 5. While patties are browning, make your favorite brown gravy. We use beef broth, Wondra, 1t. Worcestershire sauce, Garlic salt and pepper. Mix as directed on the side of the Wondra can for broth gravy. Pour gravy over steaks and reduce to simmer for 25 minutes or so.
  • 6. Serve steaks with gravy ladled over and caramelized onions on top. Excellent with Garlic mashed potatoes, or noodles or rice. Enjoy and remember... Hug each Other!

3 tablespoons crushed butter-flavored crackers
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon rubbed sage
3/4 pound ground beef
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons butter
3 tablespoons all-purpose flour
1-3/4 cups water
2 beef bouillon cubes
1/4 teaspoon browning sauce, optional
Hot mashed potatoes

Steps:

  • In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain. Remove to a platter and keep warm. , In the same skillet, saute mushrooms in butter for 2 minutes. Stir in flour; blend well. Add water and bouillon; cook and stir until smooth and thickened. Stir in browning sauce if desired. Return patties to gravy and cook, uncovered, over low heat for 10 minutes, stirring occasionally. Serve with mashed potatoes.

1/2 cup cold water (adds juiciness)
3 tablespoons plain breadcrumbs
1 1/2 tablespoons cornstarch
2 teaspoons baking powder
2 teaspoons beef bouillon powder
2 teaspoons minced onion flakes
2 teaspoons dried parsley flakes
1 1/2 teaspoons Worcestershire sauce (Lea & Perrins)
3/4 teaspoon fresh ground black pepper
1/2 teaspoon soy sauce
1/4 teaspoon ground leaf thyme
3 tablespoons unsalted butter
1/2 cup Spanish onion, cut into 1/4-inch julienne strips
4 ounces fresh mushrooms, cut to 1/8-inch slices
1 mashed garlic clove (use garlic press)
1 1/2 tablespoons all-purpose flour
1 (14 1/2 ounce) can swanson beef broth
1 1/2 teaspoons Worcestershire sauce (Lea & Perrins)

  • MIX the GRILLED SALISBURY STEAKS ingredients in a medium to large mixing bowl (mixture will be soft; patties will shrink considerably while cooking); KNEAD well using hands or mix using a large fork; DIVIDE ground beef mixture to form 4-5 oval-shaped steak patties, about 3/4" thick; PLACE patties onto a platter.
  • PREHEAT indoor grill to medium-high heat; OIL or spray grill surfaces completely with non-stick cooking spray; GRILL beef patties until sear-marks are obtained; TURN patties and repeat process (if using a press-type closable grill, sear without turning), searing until center of each beef patty is still a little pink, not quite done.
  • CUT Spanish onion into 1/4" thick, julienne strips to yield 1/2 cup; THINLY slice 4 ounces fresh mushrooms; PREHEAT oven to 350 F if using the OVEN FINISH METHOD (SEE STEP 9).

  • QUICKLY whisk the beef broth into the saucepan roux to deglaze, then add the remaining SAVORY MUSHROOM GRAVY ingredients; BRING mixture to a boil over medium-high heat while whisking constantly; REDUCE heat to medium.
  • WHISK 1/4 cup cold water (or 2 tablespoons water with 2 tablespoons cognac) with 1 1/2 tablespoons cornstarch for the SLURRY in a small mixing bowl, until smooth and cornstarch is completely dissolved; ADD the slurry gradually to gravy base in saucepan, while whisking constantly, until thoroughly blended; COOK gravy until thickened and bubbly; REDUCE heat to low; ADD grilled beef patties, immersing them in gravy.
  • STOVETOP FINISH METHOD: Simmer over low heat for 10 minutes. CAREFULLY turn steaks with a spatula. Simmer an additional 10 minutes until steaks are steam-cooked and tender.
  • OVEN FINISH METHOD: Transfer oven-safe large heavy saucepan to preheated 350 F oven. Bake patties uncovered for 20 minutes, immersed in gravy.
  • SERVE: Transfer steaks onto serving plates with a spatula. Whisk gravy to refresh consistency. Ladle gravy over steaks. Serve with desired side dishes. Enjoy!
