Yield Makes 8 servings

For the pumpkin soup:
10 whole cloves
2 whole star anise
1 stick cinnamon
2 whole allspice berries
5 whole black peppercorns
1 (1 1/2-inch) piece fresh ginger, cut into 4 pieces
4 tablespoons (1/2 stick) unsalted butter
1 medium onion, diced
5 cloves garlic, thinly sliced
2 stalks celery, diced
1 medium leek (white and pale green parts only), thoroughly washed and diced
3 (15-ounce) cans solid-pack pumpkin (not pie filling)
1/2 teaspoon freshly ground nutmeg
For the cinnamon marshmallows:
1/2 cup mini marshmallows
1/4 teaspoon ground cinnamon
For the pepita streusel:
3/4 cup all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon kosher salt
8 tablespoons (1 stick) cold unsalted butter, cut into 1/2-inch pieces
1/2 cup untoasted, unsalted pepitas (pumpkin seeds), coarsely chopped
For the whipped crème fraîche:
1/2 cup heavy cream
1 cup crème fraîche
Special Equipment
2 (8-inch) squares cheesecloth; kitchen string; blender; 1 large baking sheet; parchment paper

Steps:

  • Make the pumpkin soup:
  • Wrap the cloves, star anise, cinnamon stick, allspice berries, peppercorns, and fresh ginger in cheesecloth and secure with kitchen string.
  • In a large heavy pot over moderate heat, melt the butter. Add the onions, garlic, celery, and leeks and sauté until translucent, 5 to 6 minutes. Add the pumpkin, 2 quarts water, and the spice package and bring to a boil. Reduce the heat to moderately low and simmer uncovered until the vegetables are tender, about 30 minutes.
  • Remove and discard the spice package. Working in small batches, ladle the soup into a blender and purée until smooth. Transfer to a clean large pot then sprinkle with nutmeg and season with salt and pepper. Cover and keep warm until ready to serve. DO AHEAD: Soup can be made in advance and refrigerated, in an airtight container, up to 3 days. Reheat in a large pot over moderate heat, stirring occasionally.
  • Make the cinnamon marshmallows:
  • In a large bowl or resealable plastic bag, combine marshmallows and cinnamon and gently toss to coat the marshmallows in cinnamon. DO AHEAD: Marshmallows can be prepared in advance and stored, in a resealable plastic bag or an airtight container at room temperature, up to 3 days.
  • Make the pepita streusel:
  • Arrange a rack in the middle of the oven and preheat to 350°F. Line a large baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, brown sugar, and salt. Add the butter and, using your hands, rub the ingredients together until the texture resembles coarse cornmeal. Add the pepitas and toss to combine. Spread the mixture on the prepared baking sheet and bake until golden brown, 10 to 12 minutes. Transfer the streusel to a rack to cool, then break it into roughly 1-inch pieces. DO AHEAD: Streusel can be made in advance and stored, in an airtight container at room temperature, up to 3 days.
  • Make the whipped crème fraîche:
  • In a medium bowl, combine the heavy cream and crème fraîche. Whisk until light and fluffy. Season with salt and pepper. DO AHEAD: Whipped crème fraîche can be made in advance and refrigerated, in an airtight container, up to 2 hours.
  • To serve:
  • Ladle the warm soup into bowls and garnish with the streusel, marshmallows, and dollops of whipped crème fraîche.

SPICY SAVORY PUMPKIN SOUP

Spicy Savory Pumpkin Soup image

I made this one up on my own after I learned how to cook well enough. All kinds of beans can be used, black beans do very well as do pinto beans, but regular red or dark red kidney beans are my favorite with this particular soup. You can also substitute pumpkin puree for squash puree! I think the green onion goes perfect with the mix but a small can of green chiles works well too. This is a great soup to have in the fall. Yields about 4 medium-sized servings.

Time 40m

Yield 4 cups, 4 serving(s)

Number Of Ingredients 12

2 cups vegetable broth
1 1/2 cups pumpkin puree
1 (16 ounce) can dark red kidney beans
8 ounces corn (one small can works, or use half of a bigger one that's 14-15 oz)
1 green onion, chopped (or small can of green chiles)
1 tablespoon canola oil
1 garlic clove, peeled and mashed (or use 1 tsp of that liquid-y minced garlic)
2 teaspoons onion powder
1/4 teaspoon black pepper
1/4 teaspoon kosher salt
2 sprigs fresh cilantro
1 pinch ground ginger

Steps:

  • Rinse and drain the beans and corn, put them aside for now.
  • Bring the broth to a boil, then reduce the heat.
  • Meld the pumpkin puree into the broth, stirring well, until completely incorporated.
  • Stir in the beans.
  • Add the oil and garlic and incorporate, then lower the heat and let it simmer for a few minutes.
  • Add the corn and green onion (or the rinsed chiles if you're using those) and stir them in well.
  • Mix in the dried ingredients and incorporate. Then put in the cilantro.
  • Raise the heat a little and let it simmer until thick and bubbly, about 15-25 minutes.

Tips:

  • Choose the right pumpkin: Look for sugar pumpkins or heirloom varieties like butternut squash or kabocha squash. These are sweeter and have a denser texture, which makes for a more flavorful soup.
  • Roast the pumpkin before pureeing: Roasting the pumpkin intensifies its flavor and gives the soup a richer color. You can roast the pumpkin in the oven or on a sheet pan on the grill.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is flavorful and has a rich color. You can use chicken broth, vegetable broth, or even bone broth.
  • Don't overcook the soup: Pumpkin soup is best when it is slightly chunky, so don't overcook it. Simmer the soup for just until the vegetables are tender.
  • Season the soup to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream to brighten up the flavor.

Conclusion:

Pumpkin soup is a delicious and versatile dish that can be enjoyed all season long. It's easy to make and can be tailored to your own taste. With its creamy texture and sweet flavor, pumpkin soup is a comfort food that is sure to please everyone at the table.
