GREEN TOMATO CASSEROLE- OLD FASHIONED SAVORY PIE
This is a very old recipe that my Grandmother had saved. I only remember her making this a few times. As a kid I didn't like it. But now I sure do. Green tomatoes are just awesome! And this recipe makes them even better.

Steps:
- 1. Preheat oven to 325 degres. Slice tomatoes about 1/2 inch thick and layer the slices in a buttered glass baking dish. Sprinkle tomatoes with lemon juice, then brown sugar and salt and pepper. In a medium skillet melt butter. Mix the bread crumbs and cracker crumbs together in the pan with the butter. Stir constantly and to mix and lightly brown the crumbs. Sprinkle this over the top of the tomatoes. Bake at 325 degrees until tomatoes are tender but not mushy (about 25-35 min). These may take a little longer depending on your tomatoes.
Tips:
- Choose the right tomatoes: Use firm, green tomatoes that are not too ripe. Ripe tomatoes will be too soft and mushy for the pie.
- Slice the tomatoes thinly: This will help them cook evenly and prevent them from becoming too watery.
- Use a well-seasoned cast iron skillet: This will help to create a crispy crust on the bottom of the pie.
- Don't overcook the pie: The tomatoes should be cooked through but still have a little bit of a bite to them.
- Serve the pie warm or at room temperature: This will allow the flavors to meld together.
Conclusion:
Savory green tomato pie is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to use up those green tomatoes that are always hanging around at the end of the summer. With its flaky crust, tangy filling, and cheesy topping, this pie is sure to be a hit with everyone who tries it. So next time you have some green tomatoes on hand, give this recipe a try!
