1 package (8 oz) baby bella mushrooms, quartered
4 medium carrots, halved lengthwise and cut into 2-inch pieces (about 2 cups)
1 teaspoon finely chopped garlic
1 cup frozen small whole onions (from 14-oz bag)
2 bay leaves
1 tablespoon chopped fresh thyme leaves
3- to 3 1/2-lb cut-up broiler-fryer chicken
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1 tablespoon Muir Glen™ organic tomato paste (from 6-oz can)
Chopped fresh Italian (flat-leaf) parsley, if desired
Betty Crocker™ roasted garlic mashed potato mix, prepared as directed on package, if desired

Steps:

  • Spray inside of 5- to 6-quart slow cooker with cooking spray. In 12-inch nonstick skillet, cook bacon over medium heat until crisp. Remove bacon from skillet; drain on paper towels. Cover and refrigerate for later.
  • Drain all drippings from skillet except for 1 tablespoon. Add mushrooms and carrots to skillet; cook over medium heat 4 to 6 minutes or until mushrooms are tender and vegetables are lightly browned. Add garlic; cook 30 to 60 seconds or until fragrant. 8 - skinless, boneless chicken thighs, or 4 large chicken breasts
1 - 10 oz cream of chicken soup
1 - 10 oz cream of mushroom soup
1/2 cup(s) chicken broth
3/4 - 1 cup(s) sour cream, depending how much you like. i use a cup, we like the tang
6 - garlic cloves smashed
1 large onion, sliced
1 teaspoon(s) garlic powder
- salt and pepper to taste
1 tablespoon(s) fresh or dried parsley

Steps:

  • Slice the onion into thin slices, layer on the bottom of a sprayed crock pot..then smash the cloves of garlic and throw them in with the onions.
  • Wash the chicken, and lay them on top of the onions and garlic. salt and pepper the chicken, and sprinkle the garlic powder on the chicken.
  • in a medium bowl, mix the soups, and the chicken stock. Now pour over the chicken. Put the lid on the pot, and cook on high for 1 hour,then turn the pot to low, and cook for 3 more hours. Check for tenderness, if the chicken is fork tender remove the chicken from the pot to a plate.
  • Mix the sour cream into the soups and stir till combined, add the parsley. If the sauce is too thin,at this point I take 1 tbsp of flour and add just a tiny bit of water to make a paste. Whisk the paste into the sauce, it should thicken right up. Return the chicken to the pot, and keep warm till ready to serve. I like to serve this with rice, or mashed potatoes, using the sauce as gravy. A side of veggies, and you have dinner..

2 Tbsp fresh oregano, chopped
1/4 tsp black pepper, fresh ground
3 Tbsp butter
1 c chicken stock
1/4 c white wine
3 Tbsp lemon juice
2 clove garlic, minced
1 Tbsp minced fresh parsley

  • 1. Pat chicken dry with paper towels. Combine oregano and pepper and rub over chicken. In a skillet over medium heat, brown the chicken breasts on each side in the butter. Transfer chicken to slow cooker.
