SHAD AND SHAD ROE WITH LEMON SHALLOT BUTTER SAUCE

Categories     dinner, easy, quick, main course

Time 15m

Yield 4 servings

Number Of Ingredients 8

2 boneless shad fillets with skin, about 1 1/2 pounds
2 pairs shad roe
Salt and freshly ground pepper to taste
2 tablespoons olive oil
4 tablespoons butter
3 tablespoons finely chopped shallots
2 tablespoons lemon juice
2 tablespoons finely chopped parsley

Steps:

  • Cut the shad fillets in half crosswise. Season the fillets and roe with salt and pepper.
  • Heat 1 tablespoon oil in each of two nonstick skillets and add the fillets skin side down in one pan. In the other pan add the roe and cook both over medium heat for 3 minutes, shaking the pans. Then turn the fillets and roe and cook for 3 minutes more. (It is a good idea to cover the pan with the roe while cooking to prevent splattering.)
  • Remove the fish with a slotted spatula to a warm serving plate or platter. Separate each pair of roe lengthwise. Place a half on top of each piece of shad.
  • In one of the skillets, add the butter and shallots. Cook and stir until wilted.
  • Add the lemon juice and the parsley. Cook briefly while stirring, and then pour the mixture over the fish and serve.

Tips:

  • Select Fresh Shad: Choose fresh shad fillets with a bright, silvery skin and firm flesh. Avoid any fillets that appear dull or have a slimy texture.
  • Proper Cleaning: Before cooking, rinse the shad fillets under cold water and pat them dry with paper towels. This will help remove any excess moisture and ensure a crispy skin.
  • Seasoning is Key: Season the shad fillets generously with salt and pepper before cooking. You can also add additional seasonings such as garlic powder, onion powder, or paprika for extra flavor.
  • Use High-Quality Butter: Opt for unsalted butter when sautéing the shad fillets. This will allow you to control the saltiness of the dish and prevent it from becoming too salty.
  • Cook Over Medium Heat: Cook the shad fillets over medium heat to ensure even cooking throughout. Avoid using high heat, as this can easily overcook the fish and make it dry.
  • Flip Carefully: When flipping the shad fillets, use a thin spatula to avoid breaking them apart. Gently slide the spatula under the fillet and carefully flip it over.
  • Monitor Cooking Time: Shad fillets cook quickly, so it's important to keep an eye on them to prevent overcooking. The fillets are done when they are opaque throughout and flake easily with a fork.
  • Serve Immediately: Once cooked, serve the shad fillets immediately with your desired sides. Garnish with fresh herbs such as parsley or chives for a pop of color and flavor.

Conclusion:

Sautéed shad fillets with lemon is a simple yet delicious dish that showcases the delicate flavor of this underappreciated fish. By following these tips and using fresh, high-quality ingredients, you can create a restaurant-worthy meal at home. Whether you're a seasoned cook or a beginner, this recipe is sure to impress your family and friends. Enjoy the delightful combination of crispy skin, flaky fish, and tangy lemon sauce in every bite!
