SAUTEED GREEN BEANS WITH SOY, SHALLOTS, GINGER, GARLIC AND CHILE

Sauteed Green Beans with Soy, Shallots, Ginger, Garlic and Chile image

Provided by Tyler Florence

Categories     side-dish

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 8

2 scallions, for garnish
1 pound green beans
2 tablespoons peanut or sesame oil
1 small shallot, finely chopped
3 teaspoons minced garlic
2 teaspoons grated fresh ginger
1/2 medium red chile, like jalapeno, thinly sliced
2 tablespoons soy sauce

Steps:

  • Prepare the scallion garnish: Finely slice the scallions on an angle and drop them into a large bowl with ice and water - this will make the scallion threads curl up nicely so they look like ribbons. Set aside.
  • Wash green beans under cold running water. Cut off the root ends and discard. Bring a large pot of salted water to a boil over medium-high heat. Add the beans and blanch until bright green, about 2 minutes. Shock in ice water then drain in a colander.
  • Heat a large wok over high heat. Add the peanut oil, then add the shallots, garlic, ginger and chile. Stir the mixture around so it fries in the oil and gets fragrant, about 30 seconds. Add the green beans and toss a couple of times to coat everything evenly. Saute for a couple of minutes so the beans get a little caramelization. Add the soy sauce and cook for 1 to 2 more minutes; the beans should still be nice and crisp. Transfer to a large platter and garnish with drained scallion curls.

1 tablespoon minced garlic
1 shallot
8 ounces sliced mushrooms
2 tablespoons olive oil

SAUTEED GARLIC GREEN BEANS

Sauteed Garlic Green Beans image

We grow Italian Green Beans each year and I love to saute them in a pan with olive oil, onions and lots of garlic! Of course this recipe works with string beans or asparagus as well!

Provided by Holly Grier- Wallace

Categories     Vegetable Appetizers

Time 40m

Number Of Ingredients 8

3 clove garlic, diced slightly thick
1/2 medium onion, diced
1 bunch fresh green beans (i used italian green beans in my picture)
1-2 Tbsp extra virgin olive oil
2 Tbsp butter
2 Tbsp garlic red wine vinegar (or balsamic vinegar), more or less to taste
1/2 tsp season to taste with coarse sea salt (or regular salt if that is all you have)
1/2 tsp coarse ground pepper (or regular ground pepper) to taste

Steps:

  • 1. Clean green beans and cut into 2-3 inch lengths. Chop onion and garlic and heat extra virgin olive oil (or vegetable oil if you don't have any) in a large skillet on medium heat. Place garlic and onion in pan and saute for a minute or two, just until they begin to turn translucent (I add some salt and pepper to the onions & garlic to season them also).
  • 2. Add the green beans to the pan, sprinkle some balsamic vinegar or Garlic Red Wine Vinegar on top, season to taste with sea salt and coarse ground pepper and toss to coat well.
  • 3. Cover with a lid, turn down heat to medium/low and continue to simmer for about 20-25 minutes, tossing occasionally to cook evenly.
  • 4. The green beans are done when they are tender. Top with dots of butter, toss and they are ready to serve. These are delicious when served alone as an appetizer or with just about anything else as a side dish!

GARLIC SAUTEED GREEN BEANS

Garlic Sauteed Green Beans image

This is a Thanksgiving inspired recipe. I was trying to round out my menu last year and needed something green besides salad that would be enjoyed by all ages. Here it is, there was nothing left! Fresh herbs like oregano, basil, or thyme can be tossed with the cheese just before serving to add a different taste.

Provided by Penny Stettinius

Categories     Vegetable

Time 30m

Yield 12-14 serving(s)

Number Of Ingredients 7

2 lbs fresh green beans, trimmed
2 garlic cloves, minced
4 tablespoons unsalted butter
4 tablespoons extra virgin olive oil
1/4 cup parmesan cheese
kosher salt
freshly cracked black pepper

Steps:

  • Heat a large saute pan and add the oil and butter.
  • When hot, add the green beans and garlic and season generously with salt and pepper.
  • Toss occasionally and cook until almost tender but still a bit crisp, over medium heat.
  • Place in a warm dish and grate the cheese over the beans just before serving.

Tips:

  • Choose fresh green beans: Look for beans that are bright green and crisp. Avoid beans that are limp or have brown spots.
  • Trim the green beans: Snap off the ends of the green beans. You can also use a knife to cut off the ends.
  • Blanch the green beans (optional): Blanching the green beans helps to preserve their color and crispness. To blanch the green beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes. Drain the green beans and immediately transfer them to a bowl of ice water. Once the green beans are cool, drain them and pat them dry.
  • Sauté the garlic: Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Do not let the garlic brown.
  • Add the green beans: Add the green beans to the skillet with the garlic. Cook, stirring frequently, until the green beans are tender, about 5 minutes.
  • Season the green beans: Season the green beans with salt, pepper, and red pepper flakes. You can also add other seasonings, such as lemon juice, white wine, or Parmesan cheese.
  • Serve the green beans: Serve the green beans immediately. They can be served as a side dish or as a main course.

Conclusion:

Sautéed garlic green beans are a quick and easy side dish that is perfect for any occasion. They are healthy, delicious, and versatile. You can serve them as a side dish to grilled chicken, fish, or steak. You can also serve them as a main course with a side of rice or quinoa.
