I love the flavors in this slaw-type salad. The licorice flavor from the fennel, the sweetness of the carrots, and the tangy-tart apricots meld to create a party in your mouth. And it's so colorful, too. Even better, this salad gets better over time, so it's a great make-ahead side dish.

Tips:

  • Choose fresh and tender fennel and carrots. Look for fennel bulbs that are firm and white, with no brown spots. The carrots should be smooth and brightly colored.
  • Slice the fennel and carrots thinly. This will help them cook evenly and quickly.
  • Use a large skillet or wok. This will give the vegetables plenty of room to cook without overcrowding.
  • Heat the oil over medium-high heat. This will help to sear the vegetables and prevent them from sticking to the pan.
  • Cook the vegetables in batches if necessary. If you have a lot of vegetables, it's best to cook them in batches so that they don't overcrowd the pan and cook evenly.
  • Season the vegetables with salt and pepper to taste. You can also add other spices or herbs, such as garlic, thyme, or rosemary.
  • Serve the sautéed fennel and carrots immediately. They are best enjoyed hot and fresh.

Conclusion:

Sautéed fennel and carrots is a simple and delicious side dish that can be enjoyed with a variety of main courses. It's a great way to add some extra vegetables to your diet, and it's also a good source of vitamins and minerals. The next time you're looking for a healthy and flavorful side dish, give sautéed fennel and carrots a try.
