1 pound of Cremini (baby bella) mushrooms
2 tablespoons of butter (vegan as desired)
1 tablespoon of olive oil*
2 cloves of garlic, finely minced
Salt and pepper to taste
2 tablespoons of fresh thyme (other fresh herbs work well here as well!)
Optional squeeze of lemon juice as desired

Steps:

  • Start by thoroughly rinsing the mushrooms under water. Pat dry and then cut into thin slices (about ¼ inch thick). If you buy pre washed and sliced mushrooms, you can skip this step.
  • In a large skillet, combine the butter and olive oil over medium heat. Once the butter is fully melted, add in the sliced mushrooms with a good pinch of salt and freshly cracked black pepper. Cook for 5 minutes. Around this time, you'll end up with a decent bit of excess moisture in the pan from the mushrooms and this is okay.
  • Add in the garlic and herbs, stir, and cook for an additional 3-4 more minutes. Most of the moisture from the mushrooms should have evaporated but if not, you can drain it off. Garnish with additional herbs, a squeeze of lemon juice, and ENJOY!

Spanish chorizo, casings removed and meat sliced on an angle (I like Gaspar's)1 large Spanish onion, halved and thinly sliced1 scant cup good-quality pitted olives, green and black combined6 to 7 piquillo peppers in water, drained and thinly sliced (about 1/2 cup)4 cloves garlic, thinly sliced or chopped1 bay leaf2 tsp. orange zest and 1 half of an orange, juiced (about 1/4 cup)1 tsp. (about 1/3 palmful) fennel seeds1 tsp. (about 1/3 palmful) paprika½ tsp. hot paprika or crushed red pepper½ cup chicken stock or white Rioja (Spanish white wine)

  • Step 1Heat a large cast-iron skillet over medium-high.Step 2Cut each chicken breast into 3 pieces, either 3 triangle-shaped pieces or 3 large slices cut on an angle. Season the chicken on both sides with salt and pepper. Add the olive oil to the skillet, about three turns of the pan. Add the chicken, skin-side down, and cook until browned on the bottom, 3 to 4 minutes. Turn the chicken over and cook until browned and cooked through, 2 to 3 minutes more. 24 small crimini mushrooms, wiped clean, halved
1 bunch kale, trimmed, stems removed and chopped
1/4 cup Marsala or other sherry
Salt and pepper

Steps:

  • Heat a medium skillet with extra-virgin olive oil and butter over medium to medium-high heat. When fat is hot, add garlic and mushrooms and place a lid which is too small for the skillet down into the pan, pressing and smothering the mushrooms. 1 1/2 lbs portabella mushrooms
1 1/2 lbs cremini mushrooms
3 large shallots
1/2 cup unsalted butter
4 scallions (green parts only)
1/2 cup balsamic vinegar
5 tablespoons soy sauce
1/4 cup sugar

  • Halve portabellas& cut both portabellas and creminis in 1/4" slices.
  • Chop shallots and cook half in half of the butter over moderate heat, stirring 1 min.

1/2 cup dry white wine
1 cup vegetable broth
1/2 cup half-and-half
8 slices bread, toasted
2 cups gruyere cheese, shredded
