BLACK-EYED PEAS AND TOMATOES WITH SAUTEED PLANTAINS(OR BANANAS)
Inspired by the dish Red-Red from Ghana, this simple stew of tomatoes and black-eyed peas is traditionally served with fried plantains with variations all over Africa. Sauteéd bananas are a great substitute and the flavor combination, while unusual, is tasty and balanced. This recipe was inspired by Whole Planet Foundation microcredit clients.

SAUTEED BANANAS
Steps:
- Peel bananas and cut once crosswise and once lengthwise, so each banana is cut into four pieces. Heat the butter in a large, deep skillet over medium high heat. Dredge the bananas in flour, shaking off excess. Wait for butter foam to subside, then add bananas to skillet. Cook, turning frequently, until golden-about 10 minutes. Add sugar, then cook for 1 more minute. Serve with sugar and lemon juice.
Tips:
- Choose ripe bananas: Use ripe bananas with yellow peels and no green tinge. Overripe bananas will become mushy when sautéed.
- Use unsalted butter: Unsalted butter allows you to control the amount of salt in the dish. If using salted butter, omit the additional salt.
- Add a variety of spices: Experiment with different spices and seasonings to create different flavor profiles. Some popular options include cinnamon, nutmeg, ginger, and cardamom.
- Serve immediately: Sautéed bananas are best served immediately after cooking. They can be used as a topping for pancakes, waffles, oatmeal, or yogurt.
Conclusion:
Sautéed bananas are a quick and easy side dish or topping that can be enjoyed in many different ways. They are a great way to use up ripe bananas and add a touch of sweetness to your meal. With a variety of spices and seasonings to choose from, the possibilities are endless. So next time you have a few ripe bananas on hand, give sautéed bananas a try!
