SAUTéED CHICKEN WITH GREEN OLIVES AND WHITE WINE

Sautéed Chicken With Green Olives and White Wine image

In 2004, Mark Bittman introduced this recipe to Times readers as part of a spirited argument for chicken thighs over breasts. That argument reaches peak awesomeness here, with the chicken browned and slightly braised, with olives and walnuts, and a slight acid zing from the wine and lemon.

Time 45m

Yield 4 servings

Number Of Ingredients 8

3 tablespoons extra virgin olive oil
4 leg-thigh pieces chicken, cut in 2, or 8 thighs
Salt and freshly ground black pepper
2 cups white wine
1 cup cracked green olives
1 lemon, thinly sliced, seeds removed
1/2 cup broken walnut pieces
1/4 cup coarsely chopped parsley leaves, for garnish

Steps:

  • Put oil in a deep skillet or casserole, preferably nonstick. Turn heat to medium-high. When oil is hot, add chicken, skin side down, and brown it well, rotating and turning pieces as necessary, about 10 to 15 minutes. Season with salt and pepper.
  • With chicken skin side up, add wine and olives. Adjust heat so mixture simmers vigorously, 10 to 15 minutes.
  • When chicken is almost done, place sliced lemon on it, and cook 2 to 3 minutes more. Arrange chicken and lemon on a platter, and stir walnuts into sauce. Taste, and adjust seasoning, then spoon sauce over chicken. Sprinkle with parsley, and serve.

SKILLET CHICKEN THIGHS WITH WHITE WINE-BUTTER SAUCE

Skillet Chicken Thighs with White Wine-Butter Sauce image

The stovetop-to-oven cast-iron skillet technique in this recipe is our go-to for achieving crispy, juicy chicken thighs. If you're tight on time, the chicken is delicious without the butter sauce (simply plate the thighs straight out of the oven). But to truly impart restaurant-worthy flavor, try your hand at the classic white wine and butter sauce known as beurre blanc in French. The recipe makes a plentiful amount of sauce; nestle the chicken into some of it, then spoon more over every other component of your dinner.

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 10

4 skin-on, bone-in chicken thighs (about 2 pounds)
Kosher salt and coarsely ground black pepper
1/3 cup champagne vinegar
1/3 cup dry white wine
2 shallots, finely chopped
1/2 lemon, juiced
2 bay leaves
1/2 cup heavy cream
1/2 pound (2 sticks) unsalted butter, cubed
1/4 cup chopped chives

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the chicken dry with paper towels. Sprinkle them on both sides with 1 1/2 teaspoons each salt and pepper.
  • Heat a large oven-proof skillet (preferably cast iron) over medium-high heat. Add the chicken thighs to the skillet skin-side down and cook, moving them around once or twice to ensure even browning, until the skin is very golden brown, 11 to 12 minutes.
  • Turn off the heat. Grasp a wad of paper towels with tongs and mop up excess fat in the bottom of the skillet-this will prevent the grease from spattering all over your oven; carefully discard the paper towel. Repeat several times until there's only a thin film of oil over the bottom of the skillet.
  • Transfer the skillet to the oven and roast until the chicken is almost cooked through, 6 to 8 minutes. Flip the thighs so they are skin side up, then continue roasting until no longer pink near the bone, another 6 minutes. Remove the skillet from the oven and transfer the chicken thighs to a plate, skin side up. Wipe out the skillet and set aside.
  • Meanwhile, start your sauce. Combine the vinegar, wine, shallots, lemon juice and bay leaves in a heavy 2-quart saucepan. Simmer over medium heat until the mixture is reduced to a wet paste, 8 to 10 minutes. Add the cream and continue to simmer until the mixture is reduced to about 2 tablespoons.
  • Reduce the heat to low and remove the bay leaves. Add a few chunks of the butter and whisk constantly until melted, then add a few more chunks and whisk again until melted. Continue adding and whisking the butter, which should melt into a creamy emulsion, until all the butter is incorporated, about 4 minutes. Do not let the sauce go over 130 degrees F or it will separate. If the sauce starts to break, remove from the heat, add 2 ice cubes and whisk until it cools down and comes back together.
  • Season the sauce with 1/2 teaspoon salt and a pinch of pepper. Transfer it to the cast iron skillet, nestle the chicken on top and sprinkle the whole dish with chives. Serve immediately.

CHICKEN WITH GREEN OLIVES

Chicken With Green Olives image

This dish, which draws inspiration and ingredients from Moroccan cooking, is astonishing for its complexity, even in this simple form. It features sweet spices like cinnamon and ginger offset by garlic and paprika. But what makes it a real winner is the combination of those flavors with lemon and green olives, both of which have a mouth-puckering quality that, combined with the spice mix, is enchanting.

VINEGAR CHICKEN WITH CRUSHED OLIVE DRESSING

Vinegar Chicken With Crushed Olive Dressing image

This tangy, turmeric-stained, sheet-pan chicken makes the most of the schmaltzy bits left behind on the pan, which is deglazed with fresh garlic, briny olives and a bit of water. Think pan sauce, but done on a sheet pan.

Provided by Alison Roman

Categories     weeknight, poultry, main course

Time 40m

Yield 6 servings

Number Of Ingredients 8

3 1/2 pounds bone-in, skin-on chicken parts
1 teaspoon ground turmeric
6 tablespoons olive oil
Kosher salt and black pepper
1/2 cup white wine vinegar
1 1/2 cups green Castelvetrano olives, crushed and pitted
2 garlic cloves, finely grated
1 cup parsley, tender leaves and stems, chopped

Steps:

  • Heat oven to 450 degrees. Place chicken on a rimmed baking sheet and toss with turmeric and 2 tablespoons olive oil, and season with salt and pepper. Make sure chicken is skin-side up, then pour vinegar over and around chicken and place in the oven.
  • Bake chicken, without flipping, until cooked through and deeply browned all over, 25 to 30 minutes.
  • Meanwhile, combine olives, garlic, parsley, the remaining 4 tablespoons olive oil and 2 tablespoons water in a small bowl; season with salt and pepper.
  • Once chicken is cooked, remove baking sheet from the oven and transfer chicken to a large serving platter, leaving behind any of the juices and bits stuck to the pan.
  • Make sure the baking sheet is on a sturdy surface (the stovetop, a counter), then pour the olive mixture onto the sheet. Using a spatula or wooden spoon, gently scrape up all the bits the chicken left behind, letting the olive mixture mingle with the rendered fat and get increasingly saucy. Pour olive mixture over the chicken, then serve.

CHICKEN SAUTé WITH WHITE WINE

Chicken Sauté with White Wine image

Provided by James Beard

Categories     Wine     Chicken     Poultry     Sauté     White Wine     Spring     House & Garden

Yield Serves 4

Number Of Ingredients 6

3 1/2 to 4 pound chicken, quartered
Flour (optional)
4-6 tablespoons butter
Salt, freshly ground pepper
1 cup white wine (Pouilly Fuissé or White Pinot)
Garnish: chopped parsley or chives

Steps:

  • Brown the chicken pieces in the butter, turning each piece to color evenly. When browned, season to taste with salt and pepper and add 1/2 to 3/4 cup white wine. Reduce heat and continue cooking until chicken is tender. You may cover the pan during part of the cooking time, which speeds the process, or cook uncovered. Any additional flavorings that you choose may be added during the cooking and the chicken pieces should be turned over once or twice to bathe them thoroughly in the flavorings and juices. When the chicken is tender and cooked, remove it to a hot platter. Rinse the pan with a little additional wine and let it cook down with the juices for a few minutes. Pour pan juices over the chicken and garnish with a little parsley or chives.
  • Drink the same wine you used in the cooking: Pouilly Fuissé, Meursault, or White Pinot from California.

Tips:

  • Mise en Place: Before you start cooking, ensure all ingredients are prepped and measured. This will make the cooking process smoother and more efficient.
  • Choose the Right Chicken: Use boneless, skinless chicken breasts or thighs for this recipe. Cut them into bite-sized pieces for even cooking.
  • Dry the Chicken: Pat the chicken pieces dry with paper towels before cooking. This will help them brown better.
  • Use a Large Pan: Choose a large skillet or sauté pan with high sides to prevent splattering. This will also ensure that the chicken cooks evenly.
  • Do Not Overcrowd the Pan: Cook the chicken in batches if necessary to avoid overcrowding the pan. Overcrowding will prevent even cooking and result in steamed chicken.
  • Season Generously: Season the chicken with salt and pepper to taste. You can also add your favorite herbs and spices, such as paprika, oregano, or thyme.
  • Cook Over Medium Heat: Cook the chicken over medium heat to prevent burning. Adjust the heat as needed to maintain a steady simmer.
  • Flip the Chicken: Flip the chicken pieces halfway through cooking to ensure even browning and cooking.
  • Add the Olives and Wine: Once the chicken is cooked through, add the green olives and white wine to the pan. Bring to a simmer and cook for a few minutes, or until the olives are heated through.
  • Garnish and Serve: Garnish the dish with chopped parsley or thyme before serving. Serve immediately with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.

Conclusion:

This sautéed chicken with green olives and white wine is a quick and easy weeknight meal that is bursting with flavor. The combination of tender chicken, savory olives, and tangy white wine creates a delicious and satisfying dish that is sure to please the whole family. Serve it over mashed potatoes, rice, or roasted vegetables for a complete and satisfying meal.
