1 cup pancake mix, plus 2 tablespoons
1 tablespoon vegetable oil
¾ cup milk
5 large eggs, divided
nonstick cooking spray, for greasing
4 round sausage patties, (3½ inches (8 cm) wide and ¼-inch 6mm thick)
1 tablespoon filtered water
½ teaspoon kosher salt
4 slices american cheese
2 ring molds, or mason jar lid rings 3 1/2 (8 cm)

Steps:

  • Line a baking sheet with a nonstick mat or parchment paper.

  • Wipe out the skillet used to cook the sausage and grease again with nonstick spray. Turn the heat to medium and heat the pan for 2 minutes, then pour in the eggs.
