CROCK POT CREAM CHEESE & SAUSAGE DIP
This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

AWESOME ITALIAN SAUSAGE CREAM CHEESE DIP
Here is a simple recipe for an awesome dip. I had a similar dip like this at the Old Ebbitt Grill in Washington DC. Didn't get the actual recipe, but I had a good idea what was in it. It goes well with a good crusty bread, chips, or tortillas. This recipe has a minimum of ingredients, and once complete, you can add additional...

Steps:
- 1. Gather your ingredients.
- 2. Remove the skins from the tomatoes (blanching) and small dice.
- 3. De-seed the jalapeños and small dice.
- 4. Place the Italian sausage in a skillet over medium heat.
- 5. Cook until no longer pink.
- 6. Chef's Note: As the sausage is cooking, break into small bits with a wooden spoon.
- 7. Pour out any excess oil, and then add the tomatoes, chilies, and crushed red pepper.
- 8. Cook for about 5 minutes, and then cover, turn heat down to low, and allow to lightly simmer for an additional 5 minutes, or until the peppers are softened.
- 9. Remove from heat, and then add the cream cheese.
- 10. Stir until fully incorporated.
- 11. Add the sour cream.
- 12. Stir until fully incorporated.
- 13. Chef's Note: Using your taste buds, add a bit of salt, pepper, or any additional spices that you feel will help.
- 14. Chef's Note: Add spices a bit at a time and then taste... season and taste. Remember, good cooks always taste their food.
- 15. Serve with tortilla chips, sliced baguette or thick ripple potato chips. Enjoy.
- 16. Chef's Tip: This really does taste good right out of the pan, but it does taste better the next day. I let it cool down on the counter for about an hour or so, and then place into a bowl, cover with a bit of cling wrap, and then place in the fridge... This gives the spices and flavors a chance to get to know each other better. The only problem with this is that it seldom makes it to the refrigerator...

Steps:
- Dice the jalapenos and set aside. (Use as many as you want, depending on the level of spiciness you want). Cook the spicy sausage in a pan; when it's done browning, drain the excess liquid and fat. Add the entire pack of cream cheese and can of tomatoes. The cream cheese will melt and together with the tomatoes, will create a somewhat liquidy texture. The end result should look something like this! It's meaty and creamy, with a hint of spiciness. Don't worry, it doesn't taste like cream cheese at all. To be honest, this entire recipe is easier "done" than "said".

Steps:
- 1. In a medium microwave-safe bowl, combine cheese, sausage crumbles, and pepper. Microwave on High, stirring after each minute, for 4 minutes. Serve with tortilla chips.
Tips:
- Choose high-quality ingredients: Use fresh, flavorful sausage, cheese, and vegetables for the best results. Freshly shredded cheese is always better than pre-shredded.
- Don't overcook the sausage: Overcooked sausage will be dry and tough. Cook it until it is just cooked through, but still juicy.
- Use a variety of cheeses: A combination of cheeses will give your dip a more complex flavor. Try using a mix of sharp cheddar, mozzarella, and Parmesan.
- Add some vegetables: Vegetables will add a pop of color and nutrition to your dip. Try adding diced onions, peppers, or corn.
- Season the dip to taste: Be sure to taste the dip before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder.
- Serve the dip with a variety of dippers: Tortilla chips, crackers, and vegetables are all great options for dipping.
Conclusion:
Sausage cheese dip is a quick, easy, and delicious appetizer that is perfect for any occasion. It is a great way to use up leftover sausage, and it is always a hit with guests. By following these tips, you can make the best sausage cheese dip possible. Serve it with your favorite dippers and enjoy!
