1 teaspoon paprika
1 teaspoon ancho chili powder
1 teaspoon ground cumin
1 teaspoon sugar
¾ teaspoon salt
2 pounds extra large or jumbo shrimp, peeled and deveined, thawed if frozen
6 tablespoons unsalted butter
3 large cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice, from 1 lemon
2 tablespoons water
3 scallions, dark green parts, thinly sliced

Steps:

  • Mix the paprika, ancho chili powder, cumin, sugar and salt together in a large bowl. Add the shrimp to the spices and toss to coat evenly. Set aside.
  • Melt the butter over medium heat in a 12-inch skillet. Add the garlic and cook, stirring with a wooden spoon, for one minute. Do not brown. Add the shrimp and continue cooking over medium heat, stirring frequently, until the shrimp are almost cooked but still opaque in spots, 3 to 4 minutes. Add the Worcestershire sauce, lemon juice and water and cook until shrimp are done, 1 to 2 minutes more. Scatter the scallions over top and serve.

Its name comes from the spicy, smoky flavor the shrimp derive from being cooked with Worcestershire sauce and lots of black pepper. It is a fine and almost absurdly fast dish - once the shrimp are peeled, you can have it on the table in 10 minutes - with a rich, savory sauce that completely belies the little effort it takes. But as I discovered once I started playing around with it, the key ingredient is neither Worcestershire sauce nor pepper, but rather butter. If you start with about a tablespoon for each serving of shrimp, you can add almost any flavor you like and create a sauce with the same creaminess and rich flavor. But start with Worcestershire sauce and pepper!

4 tablespoons unsalted butter
1 teaspoon minced garlic
1 1/2 to 2 pounds peeled shrimp

1 stick unsalted butter, cut into small pieces
3 garlic cloves, minced
1 tablespoon fresh rosemary, finely chopped
1/4 1 fresh lemon juice (from 1 lemon), rinds reserved and sliced
1/4 cup Worcestershire sauce
1 tablespoon cream, optional
1 1/2 teaspoons hot sauce, such as Tabasco

1/2 teaspoon coarse salt
to ground pepper, to taste

Steps:

  • Heat a 12-inch skillet (preferably cast-iron) over medium-high heat. Season shrimp with salt and pepper. Add 1 tablespoon butter and when it is melted and foamy add the shrimp and fry until the edges are crispy and golden brown. Transfer shrimp to a bowl. To the same pan, add garlic, rosemary, lemon juice and rinds to pan. Stir in Worcestershire and bring to a simmer. Cook for 10 minutes. Remove the pan from the heat and strain out the solids. Return the strained sauce to the pan and add the remaining 7 tablespoons butter one at a time under low heat, stirring to incorporate until they are all melted. Add cream at this point, if using, along with hot sauce. Add shrimp back to pan and to heat through. Serve with baguette or rice.

1 pound shrimp
20 wooden skewers, soaked in water 30 minutes
1/2 cup soy sauce, plus 2 tablespoons
1/4 cup sake
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 shallots, finely diced
2 cloves garlic, minced
1 (28-ounce) can whole, peeled tomatoes, drained and hand-crushed
1/4 cup hoisin sauce
2 tablespoons rice vinegar
1 tablespoon red chili paste (recommended: Srirachi Hot Chili Sauce)
1/4 cup brown sugar
1/2 teaspoon chili powder
2 avocados, peeled and sliced, for garnish
2 scallions, sliced thin, for garnish
Lime wedges, for garnish

Steps:

  • Thread shrimp onto skewers and place in a shallow dish. Pour 1/2 cup soy sauce, sake, and 2 tablespoons oil over the shrimp and season them with salt and pepper. Set aside and let them marinate while you make the barbecue sauce.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat. Add shallots and garlic and cook for 1 minute. Stir in tomatoes and season with salt and pepper. Use an immersion blender to break the tomatoes up into a chunky sauce.
