3 pounds potatoes, peeled and cubed
1 package (8 ounces) cream cheese, cubed
1 cup sour cream
1/4 cup whole milk
1 small onion, chopped
1 teaspoon garlic salt
1/2 teaspoon salt
2 tablespoons butter, melted
1/4 teaspoon paprika

Steps:

  • Place the potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender. Drain; place potatoes in a large bowl. Add the cream cheese, sour cream, milk, onion, garlic salt and salt; beat until blended., Transfer to a greased 2-qt. baking dish. Drizzle with butter; sprinkle with paprika. 1 lb yam, peeled and cubed
1/4 cup onion, chopped
8 ounces reduced-fat cream cheese, cubed
2 ounces goat cheese, crumbled
1/4 cup butter, softened
1/2 cup low-fat milk
2 eggs, beaten
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh chives, chopped

Steps:

  • Preheat oven to 350. Lightly grease a 3-qt casserole dish. Set aside.
  • Cook the potatoes, yams and onion in boiling salted until tender; drain.
  • Return the drained cooked potato mixture to the pot off of heat.

14 tablespoons unsalted butter, softened, and more for the pan
6 pounds Yukon Gold potatoes, peeled and cut into chunks
2 tablespoons plus 1 teaspoon kosher salt
1 1/2 cups sour cream
1 teaspoon black pepper
6 tablespoons finely chopped chives
2/3 cup bread crumbs
2/3 cup grated Parmigiano-Reggiano cheese
