1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
¼ teaspoon Diamond Crystal® Fine Sea Salt
½ teaspoon baking soda
½ teaspoon baking powder
¼ cup confectioners' sugar for rolling
10 caramels (wrappers removed)
⅛ teaspoon Diamond Crystal® Fine Sea Salt
¼ cup heavy whipping cream
⅓ cup semisweet chocolate chips
¼ cup heavy whipping cream

Steps:

  • Cream together butter and sugar. Add egg and vanilla extract and beat until well blended.
  • Whisk together flour, Diamond Crystal® Fine Sea Salt, baking powder and baking soda in a separate bowl. Add dry ingredients to wet ingredients and mix until just combined. Form in 2 balls. Cover bowl with plastic wrap. Refrigerate for 1 hour.
  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Roll out each ball to 1/4 inch thickness on a sheet of waxed paper sprinkled with confectioner's sugar. Cut out circles or little shapes using a small 1 1/2-inch cookie cutter. Place on prepared baking sheet. (Note: If dough becomes too soft when rolling out, place back in the refrigerator.)
  • Bake 5 to 7 minutes. Allow cookies to cool on the baking sheet for 5 minutes. Remove cookies and place on wire rack to cool.
  • Salted Caramel Filling: Use a microwave safe glass measuring cup. Remove wrappers from caramels. Add caramels, Diamond Crystal® Fine Sea Salt, and heavy whipping cream to measuring cup. Microwave using 20-second intervals, for approximately 1 minute. Stir after each interval.
  • Chocolate Ganache: Use a 1 cup measuring cup. Add 1/4 cup of heavy cream. Microwave until the cream starts to bubble. (Approximately 25-30 seconds.) Remove the heavy cream from the microwave. Add chocolate chips. Let the mixture rest for 2 minutes. Then stir with a spoon until smooth.
  • To make sandwich cookies, add 1/2 teaspoon of caramel and 1/2 teaspoon of chocolate ganache to the bottom side of half the cookies. Top with another cookie to make a sandwich cookie.

2 cups white sugar
2 cups butter, melted
4 eggs
1 teaspoon vanilla extract
5 cups flour
2 teaspoons baking powder
1 teaspoon salt
4 cups semi-sweet chocolate chips
5 cups vanilla ice cream, slightly softened
mini chocolate chip

Steps:

  • Preheat oven to 375°F (190°C).
  • In a large bowl, whisk together the brown sugar, white sugar, and melted butter.
  • Add in the eggs and vanilla, and whisk until combined.
  • Add in the flour, baking powder, and salt, and mix together until just combined. Add in the chocolate chips and mix again.
  • Spay two round pans with nonstick cooking spray and separate the cookie dough into each pan. Pat down the dough with a spatula until the surface is even, and bake for 35 minutes or until golden brown.
  • While the cookies are baking, place plastic wrap in a springform pan. Pour softened vanilla ice cream into the springform pan and spread evenly. Freeze until solid, about 1 hour.
  • Once the cookies have baked and cooled, turn them over onto a tray.
  • Place the ice cream disk on top of one half and cover with the other half.
  • With your hand press the mini chocolate chips to the outside of the cookie. Freeze again until solid.

2 teaspoons baking soda
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
1/2 cup packed light brown sugar
1 1/2 cups smooth peanut butter
2 large eggs
2 teaspoons pure vanilla extract
1 1/2 cups smooth peanut butter
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
3 cups confectioners' sugar

Steps:

  • For the cookies: Stir together the flour and baking soda in a bowl. Cream the butter and both sugars on high speed in an electric mixer fitted with the paddle attachment until light, about 2 minutes. Add the peanut butter and beat until smooth. Add the eggs, one at a time, and beat until incorporated. Beat in the vanilla. Add the flour mixture and beat on low until just combined. Divide the dough in half, form into 2 rectangles, wrap in plastic wrap and refrigerate until firm, about 1 hour.
  • Cut a 12-inch peanut shape out of parchment to use as a template. Roll one piece of dough between two pieces of parchment to a rectangle a little bigger than the template. Remove the top piece of parchment and, using a pizza wheel or paring knife, cut the dough into a peanut shape. Reserve the dough scraps. Repeat with the remaining dough piece. Mold the scraps into a rectangle, wrap in plastic and chill along with the peanut shapes until firm, about 30 minutes.
  • For the filling: Meanwhile, preheat the oven to 350 degrees F. Beat the peanut butter and butter in a large bowl with an electric mixer on medium speed until combined. Slowly add the confectioners' sugar, about a 1/4 cup at a time, beating in between additions, until completely incorporated.
  • To build the cookie: Roll out the chilled rectangle of dough scraps into a large rectangle about 1/4-inch thick. Use a pizza wheel or sharp paring knife to cut long strips about 1/2-inch wide. Transfer the peanut-shaped pieces of dough on their pieces of parchment to 2 baking sheets. Lay the dough strips on top of one of the peanut-shaped pieces of dough in a crisscross, freeform pattern to mimic the lines on a peanut. Use a rolling pin to gently flatten and adhere the strips to the peanut.
  • Bake the cookies until lightly golden around the edges and dry on top, about 30 minutes. Cool completely on the baking sheets on a wire rack.
  • Turn over the cookie without lines so it sits flat-side up on a flat serving plate. Spread the filling evenly to the edges. Top with the second cookie, lined-side up. Use a serrated knife to cut into squares for serving.

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, mix together butter and sugar on medium speed until light and fluffy, about 3 minutes. Add eggs and salt; mix to combine. Add evaporated milk, vanilla extract, and vanilla bean seeds, if using; mix to combine.
  • Reduce speed to low; slowly add flour. Mix until just combined; do not overmix. Divide dough into 4 equal pieces and shape each piece into a disk. Cover tightly with plastic wrap. Transfer to refrigerator and chill until firm, at least 1 hour.
  • Preheat oven to 350 degrees. Line two baking sheets with nonstick baking mats or parchment paper.
  • Working with one disk at a time, form dough into 1-teaspoon-sized balls. Roll each ball in sanding sugar and place on prepared baking sheet, about 2 inches apart. Royal Icing for Sandwich Cookies, tinted pink with paste or gel food coloring

20 six-inch-long white lollipop sticks

Steps:

  • Follow sugar cookie recipe, but in Step 4, make rounds 1 3/4 inches instead of 2 1/2 inches, and don't cut out smaller hearts.
  • Turn over half the batch of baked cookies so bottoms are facing up. Spoon 1 scant teaspoon sandwich filling onto centers. Center lollipop stick in each. Cover with matching cookie rounds. Let dry. If desired, use royal icing to adhere small hearts reserved from Valentine Heart Pops onto pops. Let dry. Pipe royal icing through a pastry bag fitted with a 1/16-inch tip in decorative dots around cookies. When dry, store in an airtight container up to 5 days.

1 1/4 cups pink sanding sugar, for rolling
3/4 cup red-currant jelly

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, mix flour, butter, cream, vanilla, and salt until smooth. Flatten dough into 2 equal discs, and wrap in plastic. Chill until firm, 2 to 3 hours.
  • Arrange rack in middle of oven. Heat oven to 325 degrees. Line 3 baking sheets with Silpat baking mats or parchment paper.
  • On a well-sugared surface, roll out dough, one half at a time, to a 1/8-inch thickness, continuously sprinkling sugar over the dough while rolling. Using a 2-inch heart-shaped cutter, cut out 72 heart shapes. Place 24 cookies on each baking sheet. Chill all cookies until firm, about 10 minutes.
  • Bake cookies, one sheet at a time, until light golden brown, about 15 minutes. Transfer to a rack to cool.
  • In a small bowl, stir jelly until smooth. Place jelly in a small pastry bag fitted with a No. 11 plain round tip, and pipe 1/2 teaspoon per cookie on half of the cookies. Place remaining cookies on top to form sandwiches.

Steps:

  • 1. Heat oven to 350 degrees In large mixing bowl, combine 1c sugar, butter, banana and vanilla. Beat at medium speed until light and fluffy. Add flour Beat at low speed until soft dough forms. Stir in peanuts
  • 2. Shape dough into 1 inch balls. Place balls 2 inches apart on ungreased cookie sheet. Flatten balls to 2 inches diameter circles using the bottom of a drinking glass, dipping glass in sugar to prevent sticking.
  • 3. Bake for 12 to 15 minutes or until golden brown. Cool completely.
  • 4. In medium mixing bowl, combine filling ingredients Beat at low speed until smooth. Spread about 2 teaspoons filling on bottom of half the cookies. Gently press the bottoms of remaining cookies against filling to form sandwiches.

2 c flour
5 T unsweetened cocoa powder
1 1/4 t baking soda
1/4 t salt
4 T butter, in chunks
2 T shortening
1 c sugar
1 lg egg
1 1/2 t vanilla
1 c milk
Filling:
12 T butter (or margarine), Softened
3/4 c confectioner's sugar
6 T marshmallow cream
1 1/2 t vanilla (or any other extract) that goes with chocolate

Steps:

  • 1. In a small mixing bowl, stir to uniformly combine the flour, cocoa, baking soda and salt. In a larger mixing bowl, use an electric mixer to beat butter, shortening and sugar until just blended; add the egg and vanilla; beat mixture until smooth and creamy. By hand, add the flour mixture to the creamed mixture alternately with the milk; beat just until smooth. By rounded teaspoonfuls, drop the dough about 2" apart onto a greased cookie sheet. Bake at a preheated 400 for about 10 minutes or until cookie centers are firm to the touch. Cool on wire racks. 2. While cookies cool, make the cream filling. Place the softened butter or margarine in a mixing bowl; by hand, vigorously beat in the confectioner's sugar and extract. Then beat in the marshmallow cream until blended. When cookies are completely cooled, generously spread half the cookies with the cream filling. Top with the remaining cookies.
