THE BEST BEEF STEW - SAM CHOY

The Best Beef Stew - Sam Choy image

This recipe is from Cooking From the Heart by Sam Choy. A few years ago Sam Choy had a restaurant hidden in the middle of the Industrial area in Kona, on the Big Island. It wasn't big on atmosphere, but the food was wonderful and very popular. I've had this stew there and it's truly a favorite of mine. Mochiko is a sweet rice flour.

Time 25m

Number Of Ingredients 5

2 1/2 lb tri-tip steak
1/2 c sea salt
1 Tbsp garlic, minced
1/2 Tbsp cracked peppercorns
1 Tbsp sugar

Steps:

  • 1. Light your charcoal.
  • 2. Rub salt, garlic , pepper, and sugar into the meat and let sit 30 minutes.
  • 3. Pulehu in Hawaiian means "to broil on hot embers" and that's what you do, turning the meat every 4 minutes.
  • 4. Total cooking time is about 10-15 minutes, depending upon the thickness of the cut.

Tips:

  • Choose a flavorful cut of beef: Sam Choy recommends using tri-tip steak for these kabobs, but you can also use other cuts of beef, such as flank steak or skirt steak.
  • Marinate the beef: The marinade in this recipe helps to tenderize the beef and infuse it with flavor. Be sure to marinate the beef for at least 30 minutes, or up to overnight.
  • Skewer the beef: When skewering the beef, be sure to thread the skewers through the grain of the meat. This will help to prevent the beef from becoming tough.
  • Grill the kabobs: Grill the kabobs over medium-high heat until the beef is cooked to your desired doneness. Be sure to turn the kabobs frequently to prevent them from burning.
  • Serve the kabobs: Serve the kabobs immediately with your favorite dipping sauce. Some popular dipping sauces for tri-tip steak kabobs include teriyaki sauce, chimichurri sauce, or a simple mixture of olive oil and lemon juice.

Conclusion:

Sam Choy's Hawaiian Tri-Tip Steak Kabobs are a delicious and easy-to-make dish that is perfect for a summer cookout. The beef is tender and flavorful, and the pineapple and onions add a touch of sweetness and acidity. These kabobs are sure to be a hit with your friends and family.
