1 package (17-1/2 ounces) sugar cookie mix
2 tablespoons all-purpose flour
1/3 cup butter, softened
1 large egg
FILLING:
6 ounces cream cheese, softened
1/2 cup semisweet chocolate chips, melted
1/3 cup confectioners' sugar
36 caramels
2 teaspoons coarse sea salt
36 pecan halves, toasted

Steps:

  • Preheat oven to 375°. In a large bowl, combine cookie mix and flour. Beat in butter and egg until blended. Shape dough into 1-1/4-in. balls; press onto bottom and up sides of greased mini-muffin cups., In a small bowl, combine cream cheese, chocolate chips and confectioners' sugar. 1 pkg (14 oz) pillsbury® simply...® refrigerated peanut butter cookies
1-1/4 c caramels,unwrapped
1 Tbsp water
2 tsp coarse sea salt

Steps:

  • 1. Heat oven to 350°F. Spray 32 mini muffin cups with cooking spray. Remove cookie dough rounds from tray; break each in half. Place half cookie dough round in each muffin cup. Bake 15 to 20 minutes or until golden brown.
  • 2. Using end of wooden spoon, carefully press into center of each baked cookie to make 1-inch-wide indentation.
  • 3. In medium microwavable bowl, microwave caramels and water on High 1 minute. Stir; repeat until caramels are completely melted and can be stirred smooth.
  • 4. Fill each cookie cup with about 1 tablespoon melted caramels. Gently cover with plastic wrap. Let stand at room temperature about 1 hour or until set. When caramel filling is set, sprinkle a few granules of coarse sea salt on top of each.

1 cup confectioners' sugar
1 tablespoon evaporated milk
3 to 4 tablespoons melted dark chocolate, optional

  • In a large bowl, cream butter and cream cheese until light and fluffy. Gradually add flour and mix well.
