Yield 4 servings

Number Of Ingredients 13

1 tablespoon paprika
1/2 teaspoon ground cumin
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
4 6-ounce tilapia fillets
1/3 cup jarred salsa verde
2 tablespoons white wine vinegar
2 tablespoons sour cream
3 tablespoons extra-virgin olive oil
4 cups shredded coleslaw mix (one 14-ounce bag)
1 15-ounce can black-eyed peas, drained and rinsed
6 cups chopped romaine lettuce (about 1 small head lettuce)
Cornbread, for serving (optional)

Steps:

  • Combine the paprika, cumin and 1/4 teaspoon each salt and pepper in a small bowl. Rub one side of the fish fillets with the spice mixture.
  • Whisk the salsa verde, vinegar, sour cream, 1 tablespoon olive oil, 1/4 teaspoon salt, and pepper to taste in a large bowl. Add the coleslaw mix and black-eyed peas and toss. Add the lettuce to the bowl but don't toss.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add 2 fish fillets, spice-side down, and cook until nicely blackened, 3 to 4 minutes. Carefully turn the fillets and continue cooking until the fish is firm and flaky, 2 to 3 more minutes. Remove to a plate and keep warm. Repeat with the remaining 1 tablespoon olive oil and 2 fish fillets.
  • Toss the salad and season with salt and pepper. Serve the fish with the salad and cornbread.

Number Of Ingredients 14

3 tablespoons paprika
1 tablespoon onion powder
1 pinch garlic powder
1 teaspoon ground white pepper
1 teaspoon ground black pepper
1 teaspoon cayenne pepper, or to taste
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon celery seed
1 tablespoon kosher salt, or to taste
1 pound tilapia fillets
1 lemon, cut into wedges
4 slices white bread
1 tablespoon vegetable oil

Steps:

  • In a small bowl or jar with a lid, make the spice blend. Coat the fish fillets with the spice mixture, and allow to sit at room temperature for no longer than 30 minutes.

Place the fillets in the pan, and cook for about 3 minutes per side, or until fish is opaque and can be flaked with a fork. Remove from the pan, and place onto slices of white bread. Pour pan juices over them and squeeze lemon juice all over. Do not underestimate the white bread. It gets quite tasty soaking up all the juices.

Tips:

  • For the best flavor, use fresh tilapia fillets. If you are using frozen fillets, thaw them completely before cooking.
  • Make sure the skillet is hot before adding the tilapia fillets. This will help to sear the fish and prevent it from sticking.
  • Do not overcrowd the skillet. If you are cooking multiple fillets, cook them in batches.
  • Cook the tilapia fillets for 3-4 minutes per side, or until they are cooked through. The fish should be opaque in the center.
  • Serve the tilapia fillets immediately with your favorite sides.

Conclusion:

Salted and blackened tilapia is a delicious and easy-to-make dish that is perfect for any occasion.
