6 salmon steaks (1-inch thick and 6 ounces each)
2 tablespoons lemon juice
1/2 teaspoon salt
1-1/2 cups frozen pearl onions
3/4 cup frozen peas
1 package (8 ounces) cream cheese, cubed
3 tablespoons milk
1 teaspoon dill weed
1/2 cup dry bread crumbs
2 tablespoons butter

Steps:

  • Place the salmon steaks in a greased 13-in. x 9-in. baking dish. Sprinkle with lemon juice and salt. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork., Meanwhile, in a saucepan, combine the onions, peas, cream cheese, milk and dill. 4 salmon steaks, about 1 1/2 pounds total weight
2 tablespoons milk
1/4 cup flour
Salt to taste if desired
Freshly ground pepper to taste
1/4 cup peanut, vegetable or corn oil
3/4 cup mustard sauce (see recipe)
4 teaspoons finely chopped dill or parsley

Steps:

  • Dip steaks in milk. Remove and dredge on both sides in flour seasoned with salt and pepper. Shake off excess.
  • Heat oil in heavy skillet until quite hot. Add steaks and cook on one side until nicely browned, about 5 minutes. Turn and continue cooking, basting often with the hot oil, about 5 minutes.

¼ cup olive oil
2 salmon steaks
1 tablespoon garlic salt, or to taste
1 tablespoon onion salt, or to taste
1 tablespoon paprika, or to taste
1 ½ teaspoons ground black pepper, or to taste
1 ½ teaspoons salt, or to taste
1 tablespoon chopped chives
2 teaspoons chopped fresh thyme
4 leaves fresh spinach
¼ cup Parmesan cheese

1/2 cup fresh lemon juice (2 juiced halves reserved)
Coarse salt
1 1/2 teaspoons whole black peppercorns
4 salmon steaks (each 3/4 inch thick)
1 small fennel bulb, trimmed and sliced
1 small onion, thinly sliced
1/2 cup finely chopped fresh dill plus 8 sprigs, plus more sprigs for garnish
8 sprigs flat-leaf parsley
1/2 cup mayonnaise
1/2 cup sour cream
3/4 cup snipped fresh chives
Freshly ground pepper

Steps:

  • Bring 6 quarts water, 6 tablespoons lemon juice, lemon halves, 1 tablespoon salt, and the peppercorns to a boil in a large, wide pot. Reduce heat; let simmer.
  • Season two salmon steaks with salt. Place one-quarter each of the fennel and onion and 2 sprigs each dill and parsley on a long sheet of parchment; top with salted steaks, one-quarter each fennel and onion, and 2 sprigs each dill and parsley.
