SALMON ASPARAGUS TART
One summer, I worked at a small fishing inn at River's Inlet on the coast of British Columbia, where lucky fishermen sometimes caught 60-pound spring salmon! This is a nice alternative for fixing canned salmon. It also makes excellent use of fresh asparagus. -Abby Crawford Corvallis, Oregon

SALMON ASPARAGUS PIE
This recipe sounds very good and uses fresh asparagus. Again, it is a recipe from Betty Crocker Bisquick cookbooklet, October 1998. If you are like me and do not like to debone and pick thru canned salmon there is also a package of salmon. I believe it is Chicken of the Sea and is in the aisle with the tuna in the grocery store. My mom has used the packaged tuna and said it does taste a bit better than the canned and not so much of the mess.

I received this recipe from a dear neighbor years ago when we lived in the mountains near Yosemite National Park. We had four small children, and the whole family really loved this recipe. Now I make it for my husband, for guests, and for my children and grandchildren when they visit.

SALMON PIE
Mom always made this for our birthday's since it was everyone's favorite dinner. Like Emeril, our heritage is French Canadian, and after testing both his recipe and ours, my family agrees that our recipe has more salmon flavor due to the canned salmon.

Steps:
- Wash, peel and half potatoes. Place in a 3 quart saucepan, barely cover the potatoes with water, place cover on the pan and bring to a boil. Reduce heat to low and simmer for 30 minutes.
- While the potatoes are cooking, clean the canned salmon by removing any bones and skin. Reserve 1 tablespoon of the juice from the salmon. Mince onion very fine and prepare pie plate by placing bottom crust in plate.
- When the potatoes are done, drain water from the pan, add the butter, onion, ginger and the reserved juice from the salmon. Mash well, then use electric hand mixer if preferred. Add cleaned salmon, beat well then finally add the egg beating one last time.
- Transfer filling to prepared pie plate, cover with top crust. Cut 5 or 6 vent holes in the top of the crust. If desired, pat top crust with half and half or butter. Bake in preheated 400°F oven for 50-60 minutes. Enjoy!
SALMON AND ASPARAGUS IN FOIL

Steps:
- Preheat oven to 450 degrees.
- Snap the ends off asparagus spears (they will break where tender) and divide into 4 equal portions.
- Spray the center of each foil sheet with non-stick cooking spray.
- Place one salmon fillet in the center of each sheet, top with a serving of the asparagus and drizzle with lemon juice.
- Sprinkle with fresh ground pepper and salt or seasoning blend as desired.
- Bring up the sides of foil and fold top over twice.
- Seal ends, leaving room for air to circulate inside the packet.
- Place packets on a cookie sheet and cook in oven for 15 to 18 minutes or until salmon is opaque.
- Serve with lemon wedges on the side.
- Please use caution when opening the foil packs, as the steam is very hot.
Tips:
- For the perfect flaky crust, use a combination of butter and shortening. The butter will add flavor, while the shortening will help prevent the crust from becoming tough.
- To ensure even cooking, slice the asparagus spears thinly.
- Don't overcook the salmon; it should be cooked through but still moist and flaky. A good way to check for doneness is to insert a fork into the thickest part of the salmon. If the fork comes out clean, the salmon is cooked.
- If you don't have heavy cream, you can use milk instead. However, the pie will be slightly less creamy.
- For a cheesy crust, sprinkle some grated Parmesan cheese on top of the pie before baking.
- Serve the pie warm with a side salad or your favorite vegetables.
Conclusion:
This delectable salmon asparagus pie is a symphony of flavors that will tantalize your taste buds. The flaky crust, tender asparagus, and succulent salmon come together in perfect harmony, creating a dish that is both hearty and elegant. Whether you're serving it for a special occasion or a casual weeknight meal, this pie is sure to impress. So gather your ingredients, preheat your oven, and let's embark on a culinary journey that will leave you craving more.
