SALMAGUNDI BAKE

Salmagundi Bake image

I have no idea what the word "Salmagundi" is or means. My mom made this from a Better Homes and Garden cookbook. I make it now with brown rice and a little more spice and it's on the family comfort food list. Easy to put together and if I'm really lazy...I skip chopping the onions and green pepper and use frozen ones!

Number Of Ingredients 9

3/4 c long grained rice
14 oz can tomato sauce
3/4 c hot water
1 c chopped onion
1/2 c chopped green pepper
1 pound lean ground beef
12 oz can corn, drained
3 tsp chili powder
bacon strips (optional)

Steps:

  • Spread uncooked rice in bottom of a large covered baking casserole dish. Sprinkle with salt and pepper to taste. Pour 3/4 c of the canned tomato sauce evenly over the rice, then pour the hot water over the sauce. Sprinkle onions and peppers over the rice base. Crumble beef over the vegetables and pat down lightly. Sprinkle beef with salt to taste. Spread drained corn over beef. Combine remaining tomato sauce with chili powder, and spread evenly over corn. Top with strips of bacon if desired. Bake covered with casserole lid at 375F for 1 hour. Remove cover and bake an additional 15 minutes.

Tips:

  • For a vegetarian version of this dish, omit the ground beef and add an extra cup of black beans or corn.
  • To make this dish ahead of time, assemble the casserole and refrigerate it overnight. Then, bake it as directed before serving.
  • Serve this casserole with your favorite Mexican toppings, such as salsa, guacamole, sour cream, or shredded cheese.
  • If you want a spicier casserole, add a teaspoon or two of chili powder or cayenne pepper to the ground beef mixture.
