Time 8h50m

Yield 4 dinners

Number Of Ingredients 25

2 pounds ground sirloin
1 medium onion, chopped
1 jalapeno pepper, seeded and chopped
2 garlic cloves, chopped
1 large egg
1/2 cup panko bread crumbs
Salt and pepper
3 tablespoons olive oil
2 cups sliced mushrooms
2 tablespoons unsalted butter, plus 8 teaspoons for freezing
2 tablespoons all-purpose flour
2 cups dry red wine
2 cups prepared garlic mashed potatoes
2 cups blanched green beans and baby carrots
1 cup Microwave Brownie batter, recipe follows
1/2 cup (1 stick) unsalted butter
3 ounces unsweetened chocolate
2 large eggs
1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
Nonstick cooking spray
1/2 cup chocolate chips

Steps:

  • Combine the sirloin, onion, jalapeno, garlic, egg, bread crumbs, and salt and pepper, mixing well with your hands. Form the mixture into 4 (1/2-inch thick) patties, shaped like a steak. Put 1 tablespoon oil into a skillet over medium-high heat and brown the Salisbury steaks on both sides, about 3 to 5 minutes, adding more oil to the pan as needed. Set the browned steaks aside and let them cool.
  • Add the mushrooms to the same pan, along with the butter and flour. Cook over medium heat for 3 to 5 minutes, until the butter has melted and the flour is cooked through. Remove the pan from the heat and pour in the red wine. Return the pan to the heat and cook until the sauce has thickened, about 5 minutes more. Remove from the heat and let cool.
  • In a microwave-safe plastic TV dinner tray, put the steaks in the largest compartment and cover each with 1/4 of the sauce. Put 1/2 cup mashed potatoes into another section and top with 1 teaspoon butter. Put 1/2 cup vegetables in another section and top with 1 teaspoon butter. Pour enough Microwave Brownie batter into the last section to come up almost to the top of the container and sprinkle over some chocolate chips. Cover the whole thing with plastic wrap and freeze overnight, or up to 1 month.
  • When ready to eat, remove from the freezer and cut the plastic wrap away from the brownie compartment. Microwave on high for 6 minutes, then on medium for 3 minutes. (Times will vary depending on the wattage of your microwave.) Let rest for 1 minute, carefully remove the plastic wrap, and eat.
  • Put the butter and chocolate into a microwave-safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds to melt the chocolate. Set aside.
  • In another bowl, whisk together the eggs and sugar.
  • In a large bowl sift the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine. Follow instructions above.

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 35m

Yield 6 servings

Number Of Ingredients 16

1 1/2 pounds lean ground beef
1/2 cup seasoned breadcrumbs
1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
1 cube beef bouillon, crumbled (or powdered beef base)
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 whole onion, halved and thinly sliced (or diced if you prefer)
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
1 teaspoon seasoning sauce, such as Kitchen Bouquet, optional
4 dashes Worcestershire
1 teaspoon cornstarch, optional
Salt and pepper

Steps:

  • For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
  • Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
  • For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
  • Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

Tips:

  • To achieve a crispy crust on your Salisbury steak, ensure that the pan is adequately heated before adding the patties. This helps sear the surface rapidly, preventing the juices from escaping and resulting in a flavorful, golden-brown crust.
  • For a rich, savory gravy, utilize the drippings from cooking the Salisbury steak. Deglaze the pan with red wine or beef broth, scraping up any browned bits, to create a flavorful base. Then, thicken the mixture with a cornstarch or flour slurry, ensuring a smooth, velvety consistency.
  • Enhance the flavor of your Salisbury steak by incorporating a variety of seasonings and aromatic vegetables into the ground beef mixture. Garlic, onion, Worcestershire sauce, and dried herbs like thyme and rosemary are excellent choices that complement the beef's natural taste.
  • To keep the Salisbury steak moist and juicy during cooking, it's crucial not to overcook it. Use a meat thermometer to monitor the internal temperature, aiming for an ideal temperature of 160°F (71°C) for medium-rare or 165°F (74°C) for medium.
  • Elevate your Salisbury steak dinner by serving it with a medley of delectable side dishes. Mashed potatoes, roasted vegetables, or a refreshing salad are classic accompaniments that enhance the overall dining experience.

Conclusion:

Salisbury steak, a comforting and versatile dish, is a culinary delight that can be enjoyed by individuals of all ages. With its simple yet flavorful ingredients and customizable variations, this classic recipe offers endless possibilities for a satisfying meal. Whether you prefer a traditional approach or desire to experiment with different flavors and techniques, Salisbury steak promises a delicious and memorable dining experience.
