10-MINUTE SUN-DRIED TOMATO PASTA

10-Minute Sun-Dried Tomato Pasta image

Dinner is ready in 10 minutes with this creamy sun-dried tomato pasta! I use my favorite all-natural sun-dried tomatoes, and I skip heavy cream in favor of a little whole milk and starchy pasta water for a lighter sauce, but you can definitely use heavy cream if you prefer! If you're not worried about keeping this pasta dish vegetarian, toss in some shredded rotisserie chicken or leftover Italian-style baked chicken breast or skillet chicken.

Categories     Entree

Number Of Ingredients 11

8 ounces penne pasta or short pasta of your choice
3 to 4 ounces sun-dried tomatoes, (chopped, I used our all-natural sun-dried tomatoes which are bold and flavorful)
Extra virgin olive oil
2 small shallots, (chopped)
4 large garlic cloves, (minced)
Kosher salt
½ cup whole milk
½ to ¾ cup grated Parmesan cheese, (more or less to your liking (or a vegetarian Parmesan option))
1 teaspoon dried oregano
1 teaspoon red pepper flakes or Aleppo-style pepper, (less spicy)
Fresh basil, (torn)

Steps:

  • Begin cooking the pasta. Fill a medium saucepan with plenty of water and season the water well with kosher salt. Bring the water to a boil and add the pasta. Cook according to package instructions, till al dente. Make sure to reserve some of the pasta cooking water before you drain the pasta.
  • While the pasta is cooking, work on the sauce. Heat 2 tablespoons of good extra virgin olive oil in a large deep pan over medium heat until shimmering. Add the shallots, garlic, and a good pinch of salt and cook, tossing regularly for about a minute. Add the chopped sundried tomatoes and cook for another minute or so, tossing until the dried tomato bits have softened a little. Add the milk and a little bit of the pasta cooking water (about ¼ cup) and cook for another minute or two until warmed through. Stir in the oregano and red pepper flakes.
  • Turn the heat off. Add in the pasta and Parmesan cheese, mix well to make sure the pasta is well-coated (if needed, add a bit more of the pasta cooking water). Taste and adjust the seasoning to your liking.
  • Finish with the torn basil and serve immediately!

Yield 4 servings

Number Of Ingredients 13

2 small or 1 large spaghetti squash (3-3 1/2 pounds), halved lengthwise, seeded
Kosher salt
1 head garlic
1 tablespoon olive oil
8 ounces cream cheese
1 cup whole milk
Freshly ground black pepper
6 ounces salami, preferably Soppressata, sliced into 1/4-inch strips
5 ounces baby spinach (about 4 packed cups)
1/2 cup marinated sun-dried tomatoes (about 2 ounces), coarsely chopped
1/4 cup finely grated Parmesan (about 1/2 ounce)
1/2 teaspoon crushed red pepper flakes (optional)
1 1/2 cups shredded mozzarella (about 6 ounces), divided

Steps:

  • Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
  • Sprinkle each half of squash with 1/4 tsp. salt, then place facedown on prepared sheet. Trim 1/4" from top of garlic head to expose cloves. Place head on a sheet of foil, drizzle oil over, then wrap tightly to enclose. Transfer to baking sheet. Bake until interior of squash is fork-tender and garlic is very soft, 30-50 minutes, depending on size of squash. Let cool slightly.
  • Carefully unwrap garlic. Let cool slightly, then squeeze pulp out onto a cutting board. Finely chop.
  • Heat cream cheese, milk, and chopped garlic in a medium saucepan over medium, stirring occasionally, until smooth. Season with salt and pepper; set aside.
  • Using a fork, scrape squash crosswise to pull strands from shells into a large bowl; reserve shells. Toss squash with cream cheese mixture, salami, spinach, tomatoes, Parmesan, red pepper flakes, if using, and 1 cup mozzarella until combined. Stuff squash mixture back into shells and top with remaining 1/2 cup mozzarella.
  • Transfer shells to oven and bake until squash mixture is bubbling and lightly browned, about 25 minutes.
  • Do Ahead
  • Squash boats can be assembled (but not baked) 1 day ahead. Store in an airtight container and chill.

Tips:

  • Choose high-quality ingredients: Use the best salami, sun-dried tomatoes, and cheese you can find. This will make a big difference in the flavor of the dish.
  • Slice the salami and sun-dried tomatoes thinly: This will help them cook evenly and quickly.
  • Don't overcrowd the pan: If you overcrowd the pan, the salami and sun-dried tomatoes will not cook evenly.
  • Cook the salami and sun-dried tomatoes over medium heat: This will help them cook through without burning.
  • Add the cheese at the end: This will prevent it from melting and becoming rubbery.
  • Serve immediately: Salami sun-dried tomato wedges are best served immediately, while the cheese is still melted and gooey.

Conclusion:

Salami sun-dried tomato wedges are a quick and easy appetizer or snack that is perfect for any occasion. They are also a great way to use up leftover salami and sun-dried tomatoes. With just a few simple ingredients, you can create a delicious and satisfying dish that everyone will love.
