30ml (2 tbsp) mayonnaise
½ lemon, juiced
45ml (3 tbsp) greek yogurt
30ml (2 tbsp) olive oil
450g (1lb) cooked new potatoes
450g (1lb) cooked chicken meat, shredded
150g (5oz) pickled gherkins, finely chopped
10 spring onions, washed and finely sliced
4 boiled eggs, peeled and chopped
225g (½lb) cooked peas
Salt and pepper, to taste

Steps:

  • In a small bowl, mix the mayo, lemon juice, greek yogurt and olive oil. Set aside.
  • Place the rest of the ingredients in a big salad bowl.

1 2-3 pound whole chicken, boiled (or 4 cups shredded chicken meat)
1 teaspoon sea salt (plus extra if needed)
3 large potatoes, peeled, boiled, diced
3 eggs, hardboiled, peeled, chopped
2 cups diced dill pickles
3 cups mayonnaise
1/4 cup lemon juice
1/8 cup olive oil
1/2 teaspoon pepper (plus extra if needed)
cherry tomatoes, halved
black olives, whole or halved

Steps:

  • In large pot, add the chicken and enough water to cover the meat by 3-inches. Add salt, cover and bring to a boil, reduce heat, cook on medium for 1 hour. Remove chicken from water and let cool. Remove skin and bones from meat and discard. Shred 4 cups of the chicken, saving the remaining meat and chicken broth for another use. Transfer shredded chicken to the bowl.
  • While the chicken is cooking, boil potatoes and eggs in separate pots until done. Remove from water to cool before peeling eggs and dicing potatoes. Add both to a large bowl and set aside.
  • Dice pickles and add to the bowl
  • In small bowl, whisk together mayonnaise, lemon juice, olive oil, salt, and pepper.
  • Pour dressing over chicken salad and toss well. Adjust salt and pepper to taste.
  • Cover and refrigerate a minimum of 2 hours to allow flavors to infuse together.

1 pound russet potatoes
3 large eggs
3 TBS extra virgin olive oil, divided
1 boneless chicken breast
1 teaspoon salt, divided
1/4 cup lemon juice
3 large dill pickles, diced
2 cups frozen peas, thawed
1/4 teaspoon ground black pepper
1/4 cup mayonnaise
sliced radishes
green onions
fresh herbs

Steps:

  • Wash and peel potatoes then cut in quarters.
  • Place potatoes in a large saucepan and cover with water.
  • Add eggs in with the potatoes and bring to boil.
  • Once boiling, reduce heat to medium and continue cooking until potatoes are fork tender. Drain the water and transfer potatoes to a large mixing bowl to cool. Set eggs in a cold water bath to cool.
  • While the eggs and potatoes cook, in a small pan over medium-high heat add 1 TBS extra virgin olive oil.
  • Season both sides of chicken with 1/2 teaspoon salt.
  • Once oil is hot add chicken breast.
  • Cook until the chicken breast is browned, then flip over and cook other side of chicken breast.
  • Reduce heat to low and add 2 TBS lemon juice.
  • Cover pan and continue cooking until chicken is cooked thoroughly and juices run clear, about 15 minutes. Remove chicken from heat and cool.
  • When potatoes are cool to touch, coarsely cut into 1/2-inch pieces in the mixing bowl.
  • Peel the cooked eggs, dice and add to the potatoes.
  • Dice the cooled chicken breast and add to the mix.
  • Add chopped pickles, peas, 1/2 teaspoon salt and 1/4 teaspoon pepper to the potato mix and stir to combine.
  • Stir mayonnaise, 2 TBS lemon juice and 2 TBS olive oil into the potato salad until smooth.
  • Cover and refrigerate salad olivieh until read to serve.
  • When ready to serve, transfer salad to a serving plate and smooth into a round mound.
  • Garnish as you please with sliced radishes, green onions and fresh herbs.
  • Serve alone or with lavash.

4 large chicken breast halves poached, when cool, finely shred
6-8 large potatoes, boiled and roughly mashed
4-6 large eggs, hard boiled, roughly mashed
2 celery stalks, finely diced
4-6 oz dill pickle, finely chopped (should be a sour pickle, not sweet)
1/2 c peas, fresh or frozen
1 medium carrot, shredded
2-3 tsp lime juice
mayonnaise
olive oil, extra virgin
kosher salt and freshly ground black pepper

Steps:

  • 1. This recipe will serve up to 4 people. Most of the work is in the preparation of the ingredients. It's always best to prepare all your ingredients. There's a lot of vegetables to peel and chop, cook and mash.
  • 2. If you have to cook the chicken specifically for this dish you can either fry it or poach it. I usually poach it in seasoned water with a teaspoon of lime juice.
  • 3. Once you have finished all the preparation and the cooked ingredients have cooled down, add all of them together in a large mixing bowl. Pour on the mayonnaise, add the lime juice, salt and pepper and gently mix. The ingredients should adhere to each other with the mayo and now your Salad Olivieh is ready to serve.
  • 4. It should be served cold. Present the Salad Olivieh in a dish of your choice and decorate with strips of carrot, or gherkins and olives. You can decorate it in which ever way you choose.
  • 5. Traditionally, Salad Oliveh is mounded on a platter and covered with additional mayonnaise mixed with a little lime juice spread over like frosting then decorated as you like.
  • 6. The key to this salad is having all vegetables finely diced except potatoes which are roughly mashed. Sliced green olives make a wonderful addition along with a drizzle of olive oil over top. A meal in itself.

5 white potatoes
3 dill pickles
1 onion, halved
1 1/2 cups green peas, frozen
3 carrots, peeled
1 chicken breast
3 eggs
4 tablespoons white vinegar
4 tablespoons light mayonnaise
1/2 teaspoon turmeric
salt and pepper

Steps:

  • In a small pot, simmer 2 cups of water with the chicken breast, onion, carrots, turmeric, and some salt for 45 minutes. Allow to cool, and discard the onion.
  • Shred the chicken breast into small pieces with your hands.

  • In another pot, boil the potatoes and eggs.
  • Remove the eggs after 12 minutes.
  • Remove the potatoes when tender.

  • In a small pot, cook the frozen peas according to package instructions.
  • Cut the pickles into small cubes.

  • In a separate bowl, prepare the dressing by whisking the mayonnaise and vinegar. Add salt and pepper to taste.
  • Add the dressing to the potato salad, and mix well.
  • Refrigerate for 2 hours before serving.

1 (15 ounce) can sweet peas
1 bunch green onion
3 hot dogs (also works with cooked chicken bits or bologna)
6 polish dill pickles (or regular pickles if you want less spiciness)
1 bunch fresh cilantro
5 eggs
1 bunch fresh dill
1 tablespoon dry oregano
1 tablespoon crushed black pepper
2 teaspoons crushed white pepper
8 ounces regular sour cream
5 tablespoons regular mayonnaise
1 tablespoon horseradish sauce (Boar's Head Pub Style sold at Kroger)
2 teaspoons sriracha hot chili sauce (optional)

  • The following items add to taste, the amounts listed above are approximate: hot dogs (depends how much meat you want); pickles (Depends how salty you want the salad.   • Boil potatoes, carrots, hot dogs until cooked.
  • Hard boil the eggs.
  • While the above are boiling, add to bowl sweet peas.

  • Cut to small pieces (to size of a pea) and add to bowl pickles.
  • Once all the boiled items are cooked: peel, chop (to size of a pea) and add them all to the bowl: potatoes, carrots, hot dogs, eggs.
  • Add the rest of the ingredients to the bowl: oregano, black pepper, white pepper, sour cream, mayonnaise, horseradish, hot sauce.
