1-1/2 cups uncooked egg noodles
2/3 cup condensed cream of mushroom soup, undiluted
1/3 cup 2% milk
2 tablespoons chopped onion
3/4 teaspoon prepared mustard
1 can (8 ounces) sauerkraut, rinsed and well drained
1/3 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1/2 cup shredded Swiss cheese
3 tablespoons soft whole wheat bread crumbs
1-1/2 teaspoons butter, melted

Steps:

  • Cook noodles according to package directions. Meanwhile, in a small bowl, combine the soup, milk, onion and mustard; set aside., Spread sauerkraut into a 1-qt. baking dish coated with cooking spray. Drain noodles; place over sauerkraut. 1 ½ cups thousand island dressing
1 cup sour cream
1 tablespoon minced onion
6 slices dark rye bread, cubed
6 slices light rye bread, cubed
1 pound sauerkraut, drained
1 ½ pounds corn beef, cut into bite-size pieces
2 ½ cups shredded Swiss cheese
¼ cup margarine, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, mix the thousand island dressing, sour cream, and onion.
  • Arrange the dark and light rye bread cubes in the bottom of the prepared baking dish, reserving about 1/2 cup each for topping. Layer the bread with sauerkraut and corned beef. Spread the dressing mixture over the corned beef. Sprinkle with Swiss cheese, top with remaining bread cubes, and drizzle with margarine.
  • Cover, and bake 15 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.

1 (16 ounce) can sauerkraut, drained and rinsed
1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.

10 slice rye bread
1.5 lb corned beef, cooked
2.5 c swiss cheese, shredded
6 eggs
3 c milk
1/2 tsp pepper

Steps:

  • 1. Cut rye bread into 3/4 inch cubes and lightly beat the eggs.
  • 2. Grease a 13 x 9 x 2 inch baking dish and arrange bread cubes on bottom of dish.
  • 3. Coarsely shred corned beef with knife.
  • 4. Layer meat over bread and sprinkle with cheese.
  • 5. Beat eggs, milk and pepper in a bowl until well blended and pour over corned beef mixture.
  • 6. Cover with foil and refrigerate overnight.
  • 7. When ready to bake, preheat oven to 350 degrees.
  • 8. Bake casserole covered for 45 minutes, then uncover and bake for 10 minutes more or until bubbly and puffed.
  • 9. Serve with some Thousand Island Dressing on the side and sauerkraut.
