RUDY'S AT THE LOOP TEXAS HOT SAUCE

Rudy's at the Loop Texas Hot Sauce image

This is a copykat recipe I found on another internet site. I am not a hot dog fan but with Hoffman's German Franks and this hot sauce, I actually like them. I had tried making a copy of Rudy's sauce on my own, but this recipe tastes exactly the same as the one found at Rudy's on the shore of Lake Ontario just off the Oswego college campus.

Categories     main-dish

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 20

2 dried chile de arbol peppers
2 dried ancho chile peppers
2 dried guajillo chile peppers
2 tablespoons extra-virgin olive oil
1 medium sweet onion, diced
4 cloves garlic, minced
1 red bell pepper, seeded and diced
1 Fresno chile pepper, seeded and minced
2 Anaheim chile peppers, seeded and diced
1 1/2 pounds beef chuck roast, cut into ½-inch cubes
1 1/2 pounds ground beef (80% lean)
2 tablespoons all-purpose flour
3 tablespoons chili powder
2 tablespoons ground cumin
1/2 teaspoon freshly ground black pepper
Pinch of cayenne pepper
1 12-ounce bottle Mexican beer
1 1/2 quarts low-sodium beef stock
1 tablespoon kosher salt
1/4 cup chopped cilantro

Steps:

  • Remove the stems and seeds from the dried chiles and tear them into large pieces. Toast the chiles in a large skillet over medium-high heat until they start to change color, about 2 minutes. Transfer to a small bowl and add hot water to just cover the chiles. Cover and let steam for 15 minutes. Place the chiles and liquid in a blender and puree until smooth. Set aside.
  • In a large Dutch oven over medium-high heat, combine the olive oil, onion, garlic, bell pepper, Fresno chile and Anaheim chiles and cook until the onion is translucent, 6 to 7 minutes. Add both kinds of beef and cook until browned and cooked through, 7 to 8 minutes.
  • Add the flour, chili powder, cumin, black pepper and cayenne and cook until fragrant, about 2 minutes. Deglaze the pot by adding the beer and scraping up the browned bits from the bottom of the pot. Add the stock, blended chiles and salt and bring to a boil, then reduce the heat to a low simmer.
  • Partially cover the pot and simmer until the beef is tender and the chili has thickened, about 2 hours. Remove from the heat. Stir in the cilantro, cover and keep warm until serving. Serve with toppings.

REAL TEXAS CHILI

This chili contains no onions, beans or tomatoes. It is even better the next day. Season to your tastes as it may be too spicy for you. You can also add pinto beans, sour cream and lime juice, if desired.

RUDY'S FAVORITE TURKEY CHILI

Rudy's Favorite Turkey Chili image

Freezes nicely, but doesn't last long. We buy the large packages of ground turkey at a warehouse club and make up a big batch, to save time and money. Garlic is thought to help boost the immune system, so don't be shy with it. The cloves should be fresh and firm, and when mashed (with the side of the knife) and chopped they should smell sweet and not too pungent.

Time 40m

Yield 4 quarts, 12 serving(s)

Number Of Ingredients 15

1 1/2 tablespoons extra virgin olive oil
2 medium sweet onions, diced (Vidalia, Maya Sweets, etc.)
2 green bell peppers, diced
8 fresh garlic cloves, minced
2 1/2-3 lbs turkey, ground (low fat)
4 (15 1/2 ounce) cans diced tomatoes
2 (14 1/2 ounce) cans kidney beans, rinsed
3 tablespoons chili powder
1 tablespoon cumin
1 tablespoon oregano, dried
1 teaspoon parsley, dried
1 1/2 teaspoons chipotle chili pepper flakes, dried (or more, to taste)
1 teaspoon kosher salt
reduced-fat sour cream
fresh cilantro

Steps:

  • Heat a large soup pot on medium heat. Add oil, making sure the pot is not so hot that the oil smokes. Saute the onions and peppers for a minute or two, then add the minced garlic. Soften the garlic but don't let it burn.
  • Add ground turkey to the pot. Stir frequently to brown the turkey throughout. When the meat is no longer pink, carefully ladle off as much of the fat as possible. Dispose of the discarded fat by placing it in an unwanted container (such as an empty can) and freeze it - don't pour it down the drain.
  • Add tomatoes with their juices. Add remaining ingredients and stir gently. Simmer, uncovered, at least 20 minutes. Taste for seasonings, and adjust if necessary. Serve with a dollop of sour cream and a sprig of fresh cilantro.
  • If your family prefers a mildly spiced chili, omit the chipotle. For a spicier chili, add your favorite chili sauce (Tabasco, Cholula, etc.) at the table.

RUDY'S TEXAS HOT SAUCE RECIPE

Rudy's Texas Hot Sauce Recipe image

Provided by LimericksLady

Number Of Ingredients 14

3 lb ground beef
3 lg onion
24 oz tomato sauce
6 cups water
3 tsp thyme
3 tsp celery seed
1 1/2 tsp allspice
1 1/2 tsp clove
1 1/2 tsp salt
9 Tbs. chili powder
3 tsp crushed red pepper
1 1/2 tsp ginger
1 1/2 tsp cinnamon
1 1/2 tsp dry mustard

Steps:

  • Simmer onion and meat in a sauce pan until meat is in fine pieces. Drain, transfer mixture to a food processor and pulse until finely ground. Return meat mixture to pan, add remaining ingredients and simmer an additional 2 hours. I always make a double batch and freeze some. This always goes in the camper with us.

Tips:

  • Choose the right chili powder. The type of chili powder you use will greatly affect the flavor of your chili. For a classic Texas chili, use a blend that includes ancho, guajillo, and chipotle peppers.
  • Use a variety of beans. Don't just stick to one type of bean. Using a variety of beans, such as pinto, kidney, and black beans, will give your chili a more complex flavor and texture.
  • Don't overcook the meat. Overcooked meat is tough and chewy. Cook the meat until it is just tender, about 1-2 hours.
  • Let the chili simmer. The longer you simmer the chili, the better the flavors will develop. Simmer the chili for at least 1 hour, or even longer if you have the time.
  • Add toppings. Top your chili with your favorite toppings, such as cheese, sour cream, onions, and avocado. This will add extra flavor and texture to the chili.

Conclusion:

Rudy's Texas Chili is a delicious and easy-to-make chili that is perfect for a party or a weeknight meal. With its bold flavors and hearty ingredients, this chili is sure to be a hit with everyone who tries it. So next time you're looking for a delicious chili recipe, give Rudy's Texas Chili a try. You won't be disappointed!
