Seared Halibut Tacos with Grapefruit-Avocado Salsa image

We're big fans of the way citrus pairs with creamy avocado. This colorful salsa would be equally at home with chicken.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Number Of Ingredients 11

1 Ruby Red grapefruit, segmented and cut into 1-inch pieces
1 avocado, diced
2 tablespoons diced red onion
2 tablespoons chopped fresh cilantro, plus sprigs for garnish
1/2 jalapeno, seeded and finely chopped
1 tablespoon fresh lime juice
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
4 halibut fillets (4 ounces each), skin removed
8 corn tortillas
1 cup shredded Napa cabbage

Steps:

  • Make salsa: Combine grapefruit, avocado, onion, cilantro, jalapeno, and lime juice in a medium bowl. Season with salt and set aside.
  • Heat oil in a large skillet, preferably cast-iron, over medium-high heat. Season halibut generously with salt and pepper and sear, undisturbed, until golden brown, 2 to 3 minutes. Flip and continue cooking until golden and flaky, 2 to 3 minutes more. Remove and let cool slightly, then flake with a fork.
  • Toast tortillas over a gas burner, turning, until lightly charred, about 1 minute. Top with fish, salsa, and cabbage.

Tips for Making Ruby Red Grapefruit Salsa

  • Choose the ripest grapefruits. The sweeter the grapefruit, the better the salsa will be.
  • Use a sharp knife to cut the grapefruit. This will help to prevent the grapefruit from becoming too juicy.
  • Remove the pith from the grapefruit. The pith is the white part of the grapefruit that is bitter. To remove the pith, use a sharp knife to cut around the edges of the grapefruit segments. Then, use a spoon to scoop out the pith.
  • Chop the grapefruit segments into small pieces. This will help the salsa to be more evenly distributed.
  • Add other ingredients to the salsa. The recipe included here includes chopped red onion, jalapeño pepper, cilantro, and lime juice. However, you can add other ingredients to the salsa, such as chopped avocado, mango, or pineapple.
  • Season the salsa to taste. Add salt, pepper, and cumin to the salsa to taste. You can also add a pinch of cayenne pepper if you like your salsa spicy.
  • Chill the salsa before serving. This will help the flavors to meld together.
