1 tablespoon chopped fresh thyme leaves
Kosher salt and freshly ground black pepper, to taste
1 (4-pound) trimmed beef tenderloin, trimmed and tied into 2-inch sections
1 tablespoon olive oil

Time 3h35m

Yield 6 servings

Number Of Ingredients 10

1 lemon, zest grated
3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
Good olive oil
2 tablespoons minced garlic (6 cloves)
1 1/2 tablespoons minced fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
Kosher salt
3 pork tenderloins (about 1 pound each)
Freshly ground black pepper

Steps:

  • Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper. Heat 3 tablespoons olive oil in a large oven-proof saute pan over medium-high heat. Sear the pork tenderloins on all sides until golden brown. Place the saute pan in the oven and roast the tenderloins for 10 to 15 minutes or until the meat registers 137 degrees F at the thickest part. Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done. Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.

2 (2 to 3 pound) whole chicken
2 bunches fresh parsley, chopped
1 bunch fresh thyme
6 tablespoons dried rosemary
3 tablespoons grated lemon zest
12 cloves crushed garlic
3 tablespoons ground black pepper

Rub marinade both inside the cavity and all over the outside, making sure to get a little under the skin of the breasts. Place chickens in a glass dish, breast side up, and pack remaining marinade on top of the breast and around the legs. Cover dish and marinate in refrigerator for 24 to 36 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Remove chickens from marinade dish, discarding any remaining marinade. Place in a lightly greased 9x13 inch baking dish and bake in the preheated oven for about 1 1/2 hours or until chickens are no longer pink inside and their juices run clear.

Tips:

  • Choose the right herbs: Rosemary and thyme are classic herbs for marinating chicken, but you can experiment with other herbs like oregano, sage, or basil.
  • Use fresh herbs whenever possible: Fresh herbs will give your marinade the best flavor. If you don't have fresh herbs, you can use dried herbs, but use half the amount.
  • Make sure the marinade is acidic: The acid in the marinade helps to tenderize the chicken and also helps the flavors to penetrate the meat. You can use lemon juice, vinegar, or yogurt as the acidic ingredient.
  • Marinate the chicken for at least 30 minutes: The longer you marinate the chicken, the more flavorful it will be. If you're short on time, you can marinate the chicken for as little as 30 minutes, but for best results, marinate it for at least 2 hours.
  • Don't overcook the chicken: Overcooked chicken is dry and tough. Cook the chicken until it is cooked through, but still juicy. The internal temperature of the chicken should be 165 degrees Fahrenheit.

Conclusion:

Rosemary and thyme are a classic combination of herbs for marinating chicken. This marinade is simple to make and produces moist, flavorful chicken that is perfect for grilling, roasting, or baking. With just a few simple ingredients, you can create a delicious marinade that will take your chicken to the next level. So next time you're looking for a flavorful way to cook chicken, give this rosemary thyme marinade a try.
