BEEF STROGANOFF (FROM THE "OLD" RUSSIAN TEA ROOM)
This recipe is from the "old" Russian Tea Room Restaurant in NYC (before the original owner's daughter took it over.) Authentic in flavor and preparation (no short cuts) and was always served over RICE (not noodles) at the restaurant.

Steps:
- Cut meat into 1/2 inch thick slices. Place between sheets of waxed paper and pound until its 1/4 inch thick (be careful not to tear meat). Cut pounded meat into 2x1/2 inch slices. Sprinkle meat with salt and pepper, let stand for 15 minutes.
- Heat 2 TBS butter in a frying pan large enough to hold everything. Add sliced onion, cook over medium heat for 5 minutes.
- Add meat to pan and cook for 3 minutes, turning meat to brown evenly.
- Stir in flour and mustard, and cook 1 minute more. Add 1/2 cup wine and optional tomato paste. Reduce heat to low, cover pan and simmer for 5-10 minutes, stirring frequently.
- In another frying pan, heat 2 TBS butter. Add minced onion and mushrooms. Cook over medium heat 2 minutes. Add 2 TBS wine and cook 2 minutes more. Add mushroom mixture to meat mixture. Check seasonings and add warmed sour cream.
- Over lowest possible heat, simmer for 5 minutes to heat through. Do NOT let it boil.
- Serve over hot rice with a green vegetable on the side.

HOT BORSCHT FROM THE RUSSIAN TEA ROOM
This recipe is in three parts: meat bouillon, beet broth and vegetables.

- Place all ingredients in a large pot with sufficient water to cover them. Add a pinch of salt, and cook on low heat for 4 hours. Skim off fat from the top and discard. Remove approximately 1 cup of meat to use later as garnish for top of dish.
- Place beets in enough water to cover them and slowly simmer for 40 minutes, (do not boil.) Add remaining beet broth ingredients. Simmer on lowest heat for 3 to 4 hours. Peel beets. Strain the broth from the beets and keep them separately.
- Fry the bacon in a large pot in 1 teaspoon of vegetable oil until crispy. Discard bacon; only the fat is needed. To the bacon fat, add 2 tablespoons butter and the onion, carrot, cabbage and garlic. Cook on medium-low heat until the vegetables are soft. Add tarragon and dill. Add equal parts of meat bouillon and beet broth. Add cooked beets. Simmer for 15 minutes. Garnish with shredded meat, sour cream and dill.
BETTY'S OF YORK TEA ROOM FAT RASCALS - FRUIT BUNS/SCONES
When I worked in York, I used to nip down to Betty's of York Tea Rooms in my lunch break and treat myself to one of these delicious buns! Actually, they are a cross between a bun and a scone, and Betty's Fat Rascals differ from some other recipes, as they have whole blanched almonds and glace cherries on top! The origin of the name is unknown, but they are thought to have been made since the mid 19th Century - under the name of Fat Rascals! They originate from Yorkshire and Durham, and are very popular in most bakeries in the North East of England. These tasty fruit and peel buns are wonderful with a cuppa, to take on a picnic or, to tuck into a lunch box for the hungry workers and children! The original recipe uses lard, probably where the word "Fat" comes from - but I am not a lover of lard, so I have specified butter. A poignant historical note: A few years after Betty's opened its doors in York war broke out, and Betty's - in particular the basement 'Betty's Bar' - became a favourite haunt of thousands of airmen stationed around York. 'Betty's Mirror', on which many of them engraved their signatures with a diamond pen, remains on display today as a fitting tribute to their bravery, as obviously, some never came back. (NB: I note that a reviewer has said these are NOT Betty's Fat Rascals!! Well of course they aren't, as I don't have the "secret" recipe - but they are a very close match! There are dozens of Fat Rascals recipes throughout Yorkshire, this recipe is as close as you will get outside Betty's Tea Room! Enjoy them as a typical Yorkshire treat, as I still do in France!)

- Pre-heat the oven to 220C/425F/Gas 7 and grease or line a baking sheet, or a cookie sheet.
- Rub the butter into the flour until it resembles breadcrumbs.
- Add the remaining dry ingredients and mix well.
- Add the cream and mix to a stiff paste - a firm dough.
- Roll the mixture out on a floured board, to about 1" thickness and stamp out rounds, of about 3" in diameter. ( You can also shape the fat rascals by hand; take a piece of dough, about the size of a small egg, and make a small ball - flatten it out slghtly into bread roll shapes - like a bread bap shape.)
- Arrange them on the greased baking tray and glaze them generously with the beaten egg.
- Then place 2 whole blanched almonds on top with a halved glace cherry for decoration - pushing them down gently into the dough, so they do not fall off during baking!
- Bake for 15 to 20 minutes, or until they have risen and are golden brown.
- Allow to cool on a wire cooling rack.
- Store them in an airtight tin for up to 4 days.

- Pre-heat oven to 350 degrees.
- Mix together all dry ingredients.
- Mix together all wet ingredients.
- While beating with an electric mixer, slowly add dry mixture to wet mixture. Beat for 5 minutes.
- Spray three 9"" cake pans with non-stick cooking spray.
- Pour equal amounts of batter into each of the three pans.
- Bake 20 to 30 minutes. Test for doneness with a toothpick.
- Cool layers in pans on wire racks for 10 minutes.
- Carefully remove layers from pans. Place layers on wire racks to cool completely.
- Make fosting by combining butter, cream cheese and confectioner's sugar. Beat until fluffy. If desired, add 1 1/2 cups pecans.
- Frost cake and decorate top with remaining 1/2 cup pecans if desired.
- Refrigerate at least 1 hour before serving but it is best if made the day before serving. Store in the refrigerator.
ORANGE CRUNCH CAKE FROM THE BUBBLE ROOM RECIPE - (4/5)

- Combine the crunch layer ingredients together. Divide the crunch layer mixture into half. Press each batch on the bottom of two greased and floured 8" or 9" pans. Using a hand or electric mixer, mix cake ingredients at low speed in a large bowl until moistened. Beat 2 more minutes at high speed. Pour the cake batter into the two pans. YOUNKERS TEA ROOM RAREBIT SAUCE

- Place oil in a medium saucepan. Stir together flour, paprika, salt and dry mustard. Add flour mixture to oil; cook and stir for 1 minute. Stir in milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from heat; stir in Worcestershire sauce and hot pepper sauce. Add cheese and stir until melted. NOTE: To make Younkers popular rarebit burgers, cook hamburger patties to 170 degrees, until no pink remains. Place each burger in a toasted hamburger bun. Spoon about 1/4 cup of Rarebit Sauce over each bun. Serve immediately.

- To prepare the dressing, mix all the dressing ingredients in a small bowl, mix well; makes about 2 cups.
- To prepare the salad, deep fry the rice sticks, a small handful at a time for 1 to 2 minutes or until puffed, drain.
- Place about one cup of chopped lettuce in each of 6 bowls.
- Top with 1/2 cup per serving of the chicken and 1 tablespoon of nuts.
- Spoon a tablespoon (or to taste) of dressing over the salad.

I got this recipe from a local tea room. They can be made as recipe states or with white chocolate and cranberries. You can also add a number of things to the dry ingredients to make your own version such as chocolate chips etc.

- Mix together egg, half n half and vanilla.
- Blend wet ingredients with dry ingredients.
- Place on floured board, knead ten times (no more or will become to tough).
- Pat out and cut with a floured biscuit cutter or glass.
- Place on baking sheet and brush with a mixture of half n half and vanilla over tops.
- Bake at 350 degrees till brown on top and bottom like biscuits 15 - 20 minutes.

- In a large bowl, combine flour, sugar, baking powder and salt.
- With pastry blender or fingertips, rub in butter until mixture resembles coarse crumbs.
- Stir in raisins (optional).
- Make a well in the centre of the flour mixture.
- In a small bowl, use a fork to beat eggs and milk until blended; pour into well.
- Use fork to mix with quick, light strokes to make a soft, slightly sticky dough.
- Press dough into ball and knead gently on floured surface 10 times.
- Pat dough into 3/4 inch thick circle.
- Cut out, using 1 1/2 inch floured round cutter.
- Place rounds on greased baking sheet.
- Brush tops of scones lightly with glaze, and bake in 425 degree F oven for 15 minutes or until golden.
- Serve with strawberry preserves, clotted cream and tea.
DORM ROOM HOT DOG BUN BREAD PUDDING

- Preheat the oven to 350 degrees F.
- Spray a 10 by 10-inch glass or ceramic baking dish with vegetable spray and add the cubed hot dog buns. In a saucepan over low heat add the raisins, butter, condensed milk and vanilla, stirring throughout, being careful not to scorch, for 15 to 20 minutes. Remove the pot from the heat, whisk in the eggs then pour the custard over buns. Let the buns to soak for 20 to 30 minutes. Once the custard has been absorbed, sprinkle the top with pecans, cinnamon and sugar. Bake in the oven, uncovered, until set, about 30 minutes. Remove from the oven and serve.

- To make the sauce.
- In a large saucepan, melt the butter.
- Add the shrimp and mushroom caps and cook for ten minutes over medium low heat.
- Add green onions, crawfish tails, wine, lemon juice, Worcestershire sauce, bay leaves, thyme, pepper and salt, and simmer gently for 15 minutes, stirring occasionally.
- As the sauce is cooking.
- In a shallow bowl, mix the beaten egg with the milk to create an egg wash.
- Place the flour in a second shallow bowl or plate.
- Place a large skillet over medium heat and warm the oil.
- Dip each fish fillet in the egg wash and dredge in the flour.
- Pan fry until a light golden brown, turning once.
- Place the fillets on serving plates and top with sauce.
- Note: The Caribbean Room serves these with tiny boiled potatoes with parsley.
