2 tablespoons all-purpose flour

1 (1 ounce) square unsweetened chocolate, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a medium saucepan, melt chocolate and butter over low heat, stirring occasionally. Remove from the heat and add 1 cup sugar, 1 cup flour, baking powder, vanilla, 2 eggs and walnuts. Stir until well blended. Spread evenly into the bottom of the prepared pan.
  • For the next layer, in a medium bowl, beat the 6 ounces of cream cheese (reserve 2 ounces of the package of cream cheese for the next layer) with the 1/2 cup of sugar, egg, 2 tablespoons of flour, 1/2 teaspoon of vanilla, and 1/4 cup of butter. Mix until fluffy and smooth. Spread evenly over the first layer.
  • Sprinkle the 1/4 cup of chopped nuts and chocolate chips over the second layer. Bake for 25 to 35 minutes in the preheated oven. Then sprinkle the miniature marshmallows over the top and bake for 2 minutes longer.
  • Begin to prepare the icing while the bars are in the oven. In a medium saucepan, melt together the 1/4 cup of butter, 1 square of chocolate, remaining 2 ounces of cream cheese and 1/4 cup of milk. Remove from heat and stir in 3 cups of confectioners' sugar and 1 teaspoon of vanilla. Beat until smooth. Pour over the marshmallows and swirl together. Refrigerate until firm, cut into squares.

2/3 cup whole milk
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
3/4 cup unsweetened peanut butter
1 cup mini marshmallows
1/2 cup halved walnuts, toasted
Flakey salt, for garnish
Sprinkles, for garnish

Steps:

  • Line an 8-inch square baking dish with parchment paper to overhang the edges by an inch.
  • Whisk the sugar and cocoa together in a medium saucepan. Whisk in the milk until smooth. Set the pot over medium heat, stirring to keep the mixture smooth, and bring to boil. Continue to boil, stirring the edges to keep from burning, until the mixture reaches 220 degrees F, about 60 seconds. (The mixture should be thick, smooth and glossy, not crystallized.) Remove from the heat and stir in the vanilla and salt, beating until smooth. Add the peanut butter and stir in, leaving pockets of peanut buttery goodness intact if desired. Let cool until warm but still stirrable, about 5 minutes. (You want the mixture to be soft enough that you can stir in the walnuts and marshmallows, but not so hot that the marshmallows melt entirely.)
  • Stir in the marshmallows and walnuts. Spread the mixture in the prepared pan and add the flakey salt and sprinkles. Let cool completely, about 1 hour. Cut into squares to serve. (To store, refrigerate in a covered container with parchment between the layers.)

1 (5 ounce) can evaporated milk (2/3 cup)
1 (7 ounce) jar marshmallow creme (2 cups)

2 cups miniature marshmallows

  • Line a 13 x 9 inch pan with foil, butter.

  • Combine the chocolate chips, condensed milk, and butter in a double boiler. Cook over boiling water until blended, stirring constantly. Remove from heat. *I sometimes melt the chips and butter in the microwave and then add the milk rather than using the double boiler.
  • Stir the peanuts and marshmallows into the chocolate mixture.
  • Spread the mixture into a 9x13 inch dish lined with wax paper. I use a second sheet of wax paper to flatten the mixture. Spray the paper with cooking spray if you want.
  • Chill, covered, for 2 hours or until set. Cut into squares.
  • Notes: The hardest part of this recipe is cutting it after it chills. I remove the entire chunk from the pan using the wax paper, and cut it on a cutting board with a butcher knife.
  • The actual recipe says to store at room temperature in a covered dish. I always keep it in the fridge, however, because I think it's better chilled.

3 tablespoons cold unsalted butter; room temperature plus more for buttering the thermometer and pan
3 3/4 cups granulated sugar
2 cups mini marshmallows
1 1/3 cups toasted slivered almonds
1 1/2 cups heavy cream
4 ounces unsweetened chocolate, coarsely chopped
3 tablespoons light corn syrup
1 teaspoon table salt

Steps:

  • Lightly butter the face of a candy thermometer and set aside. Put the sugar, cream, chocolate, corn syrup, instant coffee, and salt in a large (4-quart) heavy-duty saucepan and stir with a spoon or heatproof spatula until the ingredients are moistened and combined. Stirring gently and constantly, bring the mixture to a boil over medium heat, 7 to 12 minutes. Cover the saucepan and let the steam clean the sides of the pan for 2 minutes. Clip the candy thermometer to the pot, being careful not to let the tip of the thermometer touch the bottom of the pot, or you might get a false reading. Let the mixture boil without stirring until it reaches 236°F to 238°F, 2 to 5 minutes. Take the pan off the heat and add the butter, but do not stir it into the mixture. Set the pan on a rack in a cool part of the kitchen. Don't disturb the pan in any way until the mixture has cooled to 110°F, 1 to 1-1/2 hours. Meanwhile, line the bottom and sides of an 8x8-inch baking pan with foil, leaving a 2-inch overhang on two opposite sides of the pan. Butter the foil. Set the pan aside. Remove the thermometer from the fudge mixture. Using a hand mixer, beat the mixture on high speed until it is a few shades lighter in color and thickens enough that the beaters form trails that briefly expose the bottom of the pan as they pass through, 10 to 20 minutes. After beating the fudge, stir 2 cups mini marshmallows and 1-1/3 cups toasted slivered almonds. Pour the thickened fudge into the prepared pan, using a rubber spatula to help nudge it out of the pot. You can scrape the bottom of the pot but not the sides; any crystals that stick to the pot stay in the pot. Smooth the top of the fudge with the spatula. Set the pan on a rack and let the fudge cool completely, about 2 hours. The fudge will be slightly soft the day it's made but will firm up overnight. Turn the fudge out onto a clean cutting board and peel off the foil. Turn the slab of fudge right side up and cut it into 25 equal pieces. The fudge will keep for a week to 10 days stored in an airtight container at room temperature.

1/2 c butter
1 - 1oz chocolate, unsweetened squares (i like darker chocolate so add 1 1/2 oz)
1 c sugar
1 c all purpose flour
1 tsp baking powder
1/4 tsp salt
2 large eggs
1 tsp vanilla extract
3/4 c chopped walnuts
2ND LAYER - CHEESECAKE
3/4 of 8 oz block of creamed cheese, softened. remaining 2 oz are for the frosting.
1/2 c sugar
1 large egg
2 Tbsp flour
1/2 tsp vanilla extract
1/4 c butter, softened
3RD LAYER - TOPPINGS
1/3 c chopped walnuts
1 c semi-sweet chocolate chips
2 c marshmallows, mini
4TH LAYER - FROSTING
2 oz creamed cheese, softened
1/4 c butter
1 - 1 oz chocolate, unsweetened squares (i like darker chocolate so add 1 1/2 oz)
1/4 tsp salt
1/4 c milk
3 c powdered sugar
1 tsp vanilla extract

  • 1. Preheat oven to 350 degrees. Prepare a 9"x12"x2" baking pan by spraying with Pam. You can also line the pan with foil or parchment for easy removal and cutting them into squares. If you 1 1/2 times the recipe, it fits in an 11"X15"X2" pan. If you double it use a 1/2 sheet pan 12"X18"X2" Be sure to use a 2" deep pan bcuz these are a thick brownie with 4 layers of yumminess.
  • 2. 1st Layer: In a medium saucepan, melt butter & chocolate together on low heat, stirring frequently. Remove from heat and stir in sugar, flour, salt, baking powder, vanilla, eggs, and walnuts. Stir until well blended. Spread evenly in the bottom of prepared pan.
  • 3. 2nd Layer: In a medium bowl, whisk together the softened creamed cheese (reserve 2 oz of the 8 oz block for the frosting) with the butter, sugar, egg, 2 Tbl flour, & vanilla. Beat until well mixed and spread carefully over the 1st layer of brownie batter.
  • 4. 3rd layer: Sprinkle 1/3 cups walnuts and 1 cup chocolate chips evenly over cheesecake layer. Bake for 30-35 minutes, less if u like gooey & more if u like them firmer. While these are baking, make the frosting. When baking time is up, sprinkle top with the mini marshmallows and bake for an additional 2 minutes or until they are melted.
  • 5. 4th Layer, The Frosting: In a medium saucepan, melt together 1/4 cup butter, 1-1oz sq chocolate, salt, whisk in remaining 2 oz creamed cheese & 1/4 cup milk until smooth. Remove from heat and slowly whisk in 3 cups powdered sugar and vanilla. Beat until smooth.
  • 6. Immediatly after removing brownies from oven spread frosting evenly over melted marshmallows and swirl chocolate frosting with the marshmallow so it's marbled together. Cool to room temp and then refrigerate for several hours before cutting into bars. Enjoy these "Bitchin Brownies"
  • 7. *Note* If you have no unsweetened chocolate blocks, add 3 TBL unsweetened cocoa and 1 TBL butter for each ounce of chocolate used.

  • Line 8- or 9-inch square pan with foil so foil extends about 2 inches over sides of pan. Lightly spray foil with cooking spray.
