Cornish Game Hens with Crab Apple-Sage Glaze image

Categories     Game     Poultry     Roast     Christmas     Quick & Easy     White Wine     Fall     Sage     Jam or Jelly     Bon Appétit

Yield Makes 4 servings

Number Of Ingredients 6

2 1 3/4-pound Cornish game hens, halved
8 fresh sage leaves
2/3 cup dry white wine
3 tablespoons crab apple jelly
3 tablespoons chopped shallots
2 tablespoons chopped fresh sage

Steps:

  • Preheat oven to 450°F. Starting at neck end of hens, slide fingers between skin and breasts to loosen skin. Place 2 sage leaves under skin of each breast half. Sprinkle hens with salt and pepper. Transfer hens, skin side up, to medium roasting pan. Roast hens 15 minutes. Meanwhile, simmer 1/3 cup wine, jelly, and shallots in heavy small saucepan until glaze is slightly thickened, about 6 minutes. Stir in chopped sage.
  • Brush half of glaze on roasted hens. Roast hens 5 minutes more. Brush with remaining glaze. Roast until hens are cooked through and glaze is bubbling, about 5 minutes longer. Transfer to platter.
  • Spoon off fat from juices in pan. Place roasting pan directly atop 2 burners over medium heat. Add remaining 1/3 cup wine and boil until liquid is reduced by 1/3, about 5 minutes. Season sauce with salt and pepper. Spoon over hens.

Tips:

  • Choose the right Cornish game hens. Look for hens that are about 1 to 1.5 pounds each. This will ensure that they cook evenly.
  • Thaw the hens completely before cooking. If you're cooking the hens frozen, they will not cook evenly and may be unsafe to eat.
  • Season the hens generously. This will help to enhance their flavor. You can use a variety of seasonings, such as salt, pepper, garlic powder, onion powder, paprika, thyme, or rosemary.
  • Roast the hens at a high temperature. This will help to brown the skin and cook the hens quickly.
  • Baste the hens frequently with the apple jelly glaze. This will help to keep them moist and flavorful.
  • Let the hens rest before serving. This will help to ensure that the juices redistribute throughout the meat.

Conclusion:

Rock Cornish game hens are a delicious and versatile dish that can be enjoyed by people of all ages. They are perfect for a special occasion or a weeknight meal. With their crispy skin, tender meat, and flavorful glaze, these hens are sure to be a hit. So next time you're looking for a new recipe, give this one a try. You won't be disappointed!
